Unniyappam
UNNIYAPPAM
Unniyappam is a sweet fritters made with rice, jaggery and banana. This is a popular sweet in Kerala.
INGREDIENTS :-
* Raw rice - 2 cups
* Medium sized ripe banana - 2
* Coconut pieces - 3 Tbs
* Ghee - 2 Tbs
* Cardamom powder - 1 tsp
* Jaggery - 350 gm
* Salt - 1 pinch
* Water - approximately 1 cup
METHOD :-
* Wash the rice.
* Soak for 6 hours.
* Then grind rice along with bananas by gradually adding water. ( approximately 1 cup)
* The rice batter should not be too fine. When we rup the batter with our two finger we feel small rice crumps ( not big crumps).
* Boil jaggery with 1/2 cup of water until the jaggery gets completely melts.
* Pour this Luke warm jaggery syrup into the rice batter. Mix well.
* Roast the coconut pieces in 2 Tbs of ghee until it becomes light brown color.
* Add this to the batter along with cardamom powder and a pinch of salt. Mix well.
* Then close the batter and allow to ferment for 8 hours in warm place.
* After 8 hours Heat the unniyappam pan.
* Pour some oil in each mould.
* when the oil becomes hot. Add the batter into each mould with a spoon.
* Fry until golden brown color in medium flame. ( flip both sides)
* Tasty unniyappam is ready to serve.
