ILA ADA
Ila ada is a Kerala delicacy made with jaggery, rice flour and coconut, wrapped in banana leaf and steamed . So that the flavor of banana leaf is fully locked in this snack.
INGREDIENTS :-
* Roasted rice flour - 1 cup
* Water - 1 1/2 cup
* Salt - to taste
* Ghee - 1 tsp
For filling :
* crushed jaggery - 1 cup
* Water - 1/4 cup
* Grated coconut - 1 1/2 cup
* Sugar - 1 TSP
* Dry ginger - small piece
* Cumin seeds - 1/4 tsp
* cardamom powder - 1/4 tsp
METHOD :-
* Boil one and half cup of water and ghee.
* When it starts bubbling.
* Add rice flour and salt.
* Mix well until the water is completely reduced and becomes a soft dough.
* Turn off the flame.
* Knead to a smooth non sticky dough by greasing your hand with ghee.
For filling :-
* To a mixer jar add sugar, dry ginger and cumin seeds.
* Grind it to a fine powder. Keep aside.
* To a pan add crushed jaggery and water.
* Boil this until the jaggery melts.
* Turn off the flame.
* Strain this to remove the dirt in the jaggery.
* Then again boil this for 2-3 minutes.
* Then add grated coconut and dry ginger mix and cardamom powder.
* Mix well. Remove from the flame and keep aside.
Making of Ila ada :-
* Firstly, put the banana leaf over the flame. So that it will easy to fold.
* Take a small portion of the dough.
* flatten over the banana leaf with your fingers.
* Place 2 Tbs of prepared jaggery filling over this and spread uniformly.
* Fold it and slightly press the edges to prevent the leakage of the filling.
* Steam this for 8-10 minutes.
* Ila ada is ready to serve.
