Elanji Roll / Love Letter
This is a popular Kerala snack. And is know by different names like mutta palada, elanji, love letter, mutta kuzhalappam. It's a crepe with a sweet filling.
INGREDIENTS :-
* Egg - 1
* All purpose flour - 225 gm
* Water - 250ml
* Salt - 1 pinch
* Turmeric powder - 1/4 tsp
For filling :-
* Sugar - 4 tbs
* Grated coconut - 1 1/2 cup
* Cardamom powder - 1/4 tsp
* Ghee - 1 tsp
* Cashew nuts - 2 tbs
* Raisins - 1 tbs
METHOD :-
* To a blender add all purpose flour, Egg, salt and turmeric powder along with water.
* Blend it nicely. Batter is ready. Keep aside.
* For filling, heat a pan in medium flame.
* Add ghee. When the ghee becomes hot turn the flame low, then add chopped cashew nuts.
* When the cashews turn light brown color add raisins.
* When raisins also turn to golden brown color.
* Add grated coconut, sugar and cardamom powder.
* Mix and combined well for 1 minute while maintaining on low flame.
* Turn off the flame after 1 minute and keep it aside.
* Heat a dosa pan in a medium flame. Spread some ghee.
* Take some batter in a laddle, spread it like a dosa in a thin manner.
* One side will be cooked in 35 - 45 seconds. Then flip it.
* Cook the other side also for 30 seconds.
* It's done. Transfer this to a plate.
* Then Pour the batter for next one in the same manner.
* At that time we shall fill the filling on the first one when it's hot .
* Take 1 tbs of filling. Keep it on the side.
* Then roll it once, then flip the ends to the inner portion with your hands. Again roll the other portion too.
* Repeat the same process for all.
* That's it. Love letter is ready to serve.
