Karimeen pollichathu
This is special Kerala style fish fry in banana leaf. Traditionally this recipe is made with karimeen also known as pearl spot. But you can also make this with any other fish.
INGREDIENTS :-
* Fish ( karimeen/ pearl spot) - 2
* Kashmiri chilli powder - 3 Tbs
* Coriander powder - 1/2 tsp
* Pepper powder - 1 Tbs
* Turmeric powder - 1/4 tsp
* Salt - to taste
* Ginger - 1 inch piece
* Garlic - 5 big flakes
For gravy :-
* Small onion - 20
* Ginger - 1 inch piece
* Green chilli - 4
* Coconut milk - 1 cup
* Coconut oil - for frying
* Curry leaves
METHOD :-
* To a mixer jar add chilli powder, turmeric powder, pepper powder, coriander powder, salt, ginger and garlic.
* Add little water. Grind it nicely.
* Take half of the grinded masala
and Marinate the fish.
* Let it rest for 10 minutes.
* To a frying pan add oil. Shallow fry fish.
* When it becomes half cooked.
* Remove from the oil.
* Keep aside.
* To the same oil (remove the extra oil) add sliced small onion, chopped green chilli, chopped ginger and the remaining grinded masala.
* Saute it till the oil seperates. Add curry leaf.
* At this moment add thick coconut milk.
* When it reduced to half.
* Add half fried fish.
* Cook until the gravy becomes completely reduced and the oil gets separates from the coconut oil.
* Take a banana leaf, show it on the open flame to heat the banana leaf so that it gets soft and easy to fold.
* Place a small banana leaf over the big piece to prevent the leaking.
* Wrap the masala coated fried fish in the banana leaf. Wrap it.
* To pan add 1 Tbs oil. Place the wrapped fish in this.
* Cook until the wrapped banana leaf becomes slightly brown color.
* Tasty karimeen pollichathu is ready to serve.
