Bebinca


  This is a popular dish in Goa. All the ingredients are familiar. This is a sticky layered cake. 

INGREDIENTS :-

* All purpose flour - 75 gm

* Coconut milk - 2 cups

* Egg yolk - 5

* Sugar - 1 cup

* Ghee  - 2 tbs

* Vanilla essence - 1/4 tsp

* Nutmeg powder - 2 pinch

* Salt - a pinch

For caramel :-

* Sugar - 2 tbs

* Water - 3 tbs

METHOD :-

* Caramelize the sugar with 2 tbs sugar and 3 tbs water. Keep aside. 

* Mix the egg yolk and vanilla essence. 

* To a bowl add Flour, nutmeg powder a pinch of salt.  Mix well. 

* To this gradually add  3/4 cup of coconut milk from 2 cups of coconut milk. 

* Mix well without any lumps. 

* Then add egg yolk - vanilla mix. 

* Mix well. 

* After that add sugar. Mix well until it gets completely melts. 

* Finally add the remaining coconut milk. Mix well. 

* Seperate this  mixture into 2 equal portion. 

* To one portion add already prepared caramel sugar. 

* Preheat the oven at 180°C for 10 minutes. 

* Take a 7 inch rectangle or square baking tray. 

* Grease with ghee. 

* To this add 1/4 cup of normal batter ( without caramel syrup). 

* Bake for 10 minutes or until it gets set. 

* Take out from the oven. 

* Just apply some melted ghee over that. (To separate the layers after baking) 

 * Then add 1/4 cup of caramel batter to this. 

* Again bake for 10 minutes (completely set) . 

* Repeat the procedure until  the batter is completely finished. 

* When all the baking is completed take out from the oven. 

* Let it cool completely. 

* De-mould from the tray. 

* Cut into piece. 

* Very yummy bebinca is ready to serve.
