Kerala Cheruparippu payasam / Cheruparippu Pradhaman
Cheruparippu payasam is a traditional Kerala dessert. Usually condensed milk is not add in traditional recipe. I always add condensed milk in this, but adding condensed milk will increase the taste. If you don't like to add condensed milk add more Jaggery instead, anyway it tastes good. This payasam has a special place in the hearts of Keralites, often served as a part of the grand feast known as sadhya. Goes well with ripen banana and Pappadam.
INGREDIENTS :-
* Split moong dal - 1 cup
* Jaggery - 250 gm
* Thick coconut - 1 cup
* Second coconut milk - 2 cup
* Water - 4 cup
* Condensed milk - 1/2 cup
* Cashew nuts and raisins - 2 tbs
* Cardamom powder - 1 tsp
* Ghee - as needed
METHOD :-
* Dry roast the split moong dal until it slightly change the color.
* Wash it.
* Heat a thick bottom khadai.
* Add the roasted moong dal along with 4 cups of water.
* Cook till it's completely cooked.
* After that just slightly mash it. Keep aside.
* Boil Jagerry along with 1/2 cup water.
* When the jaggery completely melts. Turn off the flame.
* Strain it.
* Add this jaggery syrup and little ghee to the cooked moong dal.
* Allow to boil in medium flame.
* Stir it for 10 minutes.
* Then add second coconut milk.
* Stir it continuously for 10 minutes, until the water content slightly reduced
* At this moment turn the flame low.
* Then add Thick coconut milk, cardamom powder and condensed milk.
* Allow to boil this for 30 seconds, stir continuously.
* After 30 seconds turn off the flame.
* Heat a pan. Add some ghee.
* When it becomes hot add cashew nuts and raisins.
* Roast this.
* Then add this to the payasam. Mix it.
* Tasty cheruparippu payasam is ready.
* Serve with ripen banana or Pappadam.
