MASALA DOSA
Masala dosa is a popular South Indian breakfast. This is a stuffed crepe. To make the delicious masala dosa without any mistake follow my step by step instructions.
INGREDIENTS :-
For Masala :-
* Potato - 2
* Carrot - 1 small
* Onion - 1 small
* Green chilli - 2
* Ginger - 1 inch piece
* Fennel seed - 1/2 tsp
* Turmeric powder - 1/4 tsp
* Oil - 1tbs
* Curry leaves - 1 sprig
* Coriander leaves - 2 tbs
For Dosa :-
* Raw rice - 3 cup
* Urad dal - 1/2 cup
* Fenugreek seeds - 1 tsp
* Boiled rice - 3/4 cup
METHOD :-
For Dosa batter :-
* Mix urad dal and fenugreek seeds.
* Wash the urad dal and fenugreek seeds well.
* Wash the rice and soak for 5 hours. ( soak rice separately)
* Soak urad dal and fenugreek in the room temperature for 3 hours and then keep it in the fridge for 2 hours.
* "Do not put the rice in the fridge".
* Take the urad dal from the fridge.
* Add urad dal and fenugreek seeds to the grinder grind it nicely by adding enough cold water.
* After that grind the rice along with boiled rice.
* Mix the two batters, then add salt.
* Let it ferment for 8 hours.
For masala :-
* Boil the potato, then peel the skin.
* Mash the boiled potatoes with a masher.
* Grate the carrot and mix with mashed potato.
* Heat the oil in a pan.
* When the oil becomes hot add fennel seed, chopped ginger and green chilli.
* Saute it for few seconds. Then add chopped onion.
* Saute it till it becomes transparent.
* Add Curry leaves to this followed by turmeric powder and salt. Mix well.
* Then add mashed potato and grated carrot.
* Mix well.
* Finely add coriander leaves.
For Masala dosa :-
* Heat a dosa tawa on medium flame.
* Pour one ladle of batter and spread in circular motion to make dosa.
* Add some ghee over that.
* Allow the dosa to get crispy.
* Then spread 2 tbs of masala.
* Fold it.
*Serve with sambar and chutney.
