Jackfruit Varattiyathu / chakka Varattiyathu

  Jackfruit Varattiyathu or chakka Varattiyathu is a delicious sweet can be stored upto a year in room temperature. We can make jackfruit ada, jackfruit payasam out of this. 

INGREDIENTS :-

* Deseeded jackfruit - 1 kg

* Jaggery - 450 gm

* Ghee - 2 - 4 tbs

METHOD :-

* Cut the deseeded jackfruit into small pieces. 

* Steam the  jackfruit in a steamer until it cooked well. 

* Boil the jaggery along with 1/2 cup of water until the jaggery gets completely melts. 

* Turn off the flame and strain this to remove the impurities in jaggery. Jaggery syrup is ready. Keep aside. 

* Put a wide and thick bottom khadai on the flame. 

* Add the cooked jackfruit. 

* Stir it continuously in medium flame until the water content in the cooked jackfruit is completely gone. 

* At this time add jaggery syrup and 1 tbs ghee. 

* Stir it continuously otherwise it's a chance to stick in the both of the pan. 

* Stir this until the jackfruit mix becomes thick and non sticky. pour some ghee in between. 

* Finally add little ghee and remove from the flame. 

* Let it cool down completely. 

* Take a glass jar  pour 2 tbs of sugar on the bottom of the jar, then transfer the jackfruit Varattiyathu to the glass jar ( by doing this will result in longer shelf life). 

* Delicious jackfruit Varattiyathu or chakka Varattiyathu is ready.
