Vettu Cake / Fried Cake
This is popular Kerala teashop snack. It forms cracks while frying that's why it's called Vettu cake (vettu means crack).
INGREDIENTS :-
* All purpose flour - 1 cup
* Egg - 2
* Sugar - 1/2 cup
* Baking soda - 1/4 tsp
* Cardamom powder - 1/2 tsp
* oil - for frying
METHOD :-
* Add sugar to a mixer jar and grind to a fine powder. Keep aside.
* To a bowl add flour, baking soda, cardamom powder. Mix well.
* To an another bowl add powdered sugar and egg.
* whisk it well.
* To this add the flour mix.
* Mix it well. (Do not add water)
* Let it rest for 1 hour.
* After that make a lemon sized ball by wetting the hands, because the dough is little bit sticky.
* Heat oil in a pan. When the oil becomes hot add the dough balls. Then turn flame to medium.
* Fry it in the medium flame.
* When the cracks appears on the ball and fried well.
* Take out from the oil.
* Tasty vettu cake is ready.
