BOLI
Boli is a very yummy sweet . Boli and ada payasam, a harmonious treat from Kerala Cuisine.
INGREDIENTS :-
For filling :-
* Chana dal - 3/4 cup
* Jaggery - 2 piece
* Cumin powder - 1/2 tsp
* Cardamom powder - 1/2 tsp
* Dry ginger powder - 1/2 tsp
* Ghee - 2 tbs
* Turmeric powder - 1/4 tsp
* Water - 1 cup
For dough :-
* All purpose flour - 1 cup
* Ghee - 2 tsp
* Sugar - 1 tsp
* Milk - 4 tbs
* Water - 4 tbs
* Turmeric powder - 1pinch
* Salt - 1 pinch
METHOD :-
For filling :-
* Dry roast the chana dal till light brown color.
* Soak for 15 minutes.
* Wash well.
* Cook the chana dal along with turmeric and water.
* Cook until the chana dal is completely cooked.
* Let it cooled down and grind to a fine paste. Keep aside
* Boil the jaggery along with water.
* When the jaggery gets completely melts.
* Strain it to remove the impurities. Keep aside
* Put a pan on the flame. Add ghee.
* Then add grinded chana dal paste, jaggery syrup, cumin, dry ginger and cardamom powder.
* Cook until it becomes thick.
* Allow to cool.
For dough :-
* In a bowl add flour, salt, sugar, turmeric powder and ghee.
* Mix well.
* Then add milk and water until a smooth dough. Brush some ghee.
* Let it rest for 1 hour.
Boli making :-
* When the chana mix becomes cooled.
* Make medium sized balls.
* Take the dough, similarly make medium sized balls out of the dough.
* Take one dough balls. Roll it to a small disc shaped sheet.
* Place the chana mix ball on the center. Then cover it with the dough.
* Dip this in flour. Then roll it to a fine sheet.
* Heat the tawa to medium hot. Place the boli. Cook both sides by brushing some ghee.
* In the same way make rest of the boli.
* Serve with ada payasam.
