Thean Mittai / Honey Candy
Honey candy or thaen mittai is the childhood favorite of many South Indians. When we take a bite into this candy the syrup (thaen) oozes out from the candy that makes it more enjoyable.
INGREDIENTS :-
* Idli rice - 1 cup
* Urad dal - 1/4 cup
* Baking powder - 1/4 tsp
* Orange food color - 1/4 tsp
* Salt - 1 pinch
* Sugar - 1 1/2 cup
* Water - 1 cup
* Lemon juice - 1 tbs
METHOD :-
* Wash the rice and urad dal. Soak them separately for 3 hours.
* After that drain this.
* Add soaked drained urad dal to a mixer jar. Grind it to a smooth thick paste. (Add little water at a time because the batter should be thick)
* Do not add too much of water.
* Then grind the soaked drained rice like the same procedure.
* Then mix the two batter along with food color and salt.
* Boil sugar and water in a pan until the sugar gets completely melts and it becomes little thick syrupy.
* At this stage add lemon juice to the syrup. Then keep this in very low flame.
* Heat oil in a pan for deep frying.
* Wet the hands with some water and take a small portion of the batter with your hands.
* Drop this in the hot oil.
* Fry it till the outer layer becomes crispy .
* Take out from the oil and drop this in the warm sugar syrup.
* Let it soak for 5 minutes.
* Then take out from the syrup.
* Yummy Honey candy or thaen mittai is ready.
