KERALA STYLE VEGETABLE STEW
Kerala Style Vegetable Stew is a fast recipe, that is a staple dish from Kerala. The mix of vegetables making it sound and nutritious. The Vegetable Stew, here i am making with bubbled potatoe, carrots, beans. The blend of vegetables is absolutely your decision. This formula is a gentle stew that is carefully flavored with pepper powder and green chilly enhanced with curry leaves and coconut milk. The ideal blend for this vegetable stew is appam or palappam and idly.
If you are making non- veg stew , you can add any type of meat like mutton, chicken or beef.
INGREDIENTS:-
* Potato - 2
* Carrot - 1
* Big Onion - 1
* Ginger - 1 Tsp
* Green chilly - 3 - 4
* Curry leaves - 1 spring
* Coconut oil - 1 Tbsp
* 2nd coconut milk - 1 cup
* Thick coconut milk - 3/4 cup
* Salt - to taste
METHOD :-
* Wash and chop the potato in to medium sized pieces.
* Take a pressure cooker, add potato along with water and salt. Cook it till 1 whistle.
* Put a kadai on the stove, add onion, green chilly , ginger, carrot pieces and 1/4 cup water.
* Boil this for 2 minutes.
* After that add boiled potato and 2nd coconut milk.
* Allow to boil, when it becomes thick.
* Add thick coconut milk. Stir it continuously on medium flame.
* When it's start little bubbling remove from the flame.
* At this time garnish with fresh curry leaves, coconut oil and pepper powder.
* Close the kadai for 5 minutes.
* Vegetable stew is ready to serve. Serve with hot palappam , idly, dosa etc....
