Raw banana erissery

    Raw Banana - yam Erisery / Chena - Kaya erissery         This is a traditional Kerala dish. It's a flavourful dish made with two main ingredients, yam and raw banana.     INGREDIENTS:- * Raw banana ( nethrakkaya) - 1 * Yam - small piece * Toor dal - 1/4 cup * Grated Coconut - 1/2 + 1/2 cup *  Cumin seeds - 1/2 tsp * Shallots - 3 * Turmeric powder - 1/2 tsp * Chilli powder - 1 1/2 tsp * Pepper powder - 1/2 tsp * Coconut oil - 2 tbs * Mustard seeds - 1 tbs * Dry red chilli - 3 * Curry leaves - 2 sprigs * Salt - to taste METHOD :- * To a pressure cooker add Toor dal, raw banana pieces, yam  pieces, turmeric powder.  * Add enough water for cooking this.  * Cook until it's completely cooked.  * When the pressure is completely gone, open the lid.  * Just slightly mash this with a masher.  * To this add chilli powder, pepper powder and salt.  * Add 1/2 cup grated Coconut along with cumin seeds and shallots...

Vettu cake / Fried cake

          Vettu Cake / Fried Cake           This is popular Kerala teashop snack. It forms cracks while frying that's why it's called Vettu cake (vettu means crack).  INGREDIENTS :- * All purpose flour - 1 cup * Egg - 2 * Sugar - 1/2 cup * Baking soda - 1/4 tsp * Cardamom powder - 1/2 tsp * oil - for frying METHOD :- * Add sugar to a mixer jar and grind to a fine powder. Keep aside.  * To a bowl add flour, baking soda, cardamom powder.  Mix well.  * To an another bowl add powdered sugar and egg.  * whisk it well.  * To this add the flour mix.  * Mix it well. (Do not add water) * Let it rest for 1 hour.  * After that make a lemon sized ball by wetting the hands, because the dough is little bit sticky.  * Heat oil in a pan.     Authentic Malabar Sulaimani Tea          Sulaimani tea is a spiced black tea popular in Malabar region. Let's see how to make sulaimani tea.  INGREDIENTS :- * Tea powder - 1/2 tsp * Cardamom - 1 * Cinnamon - 2 inch piece * Sugar - as needed * Water - 250ml METHOD:- *  To a mortar and pestle add cinnamon and cardamom.  * Roughly crush it. Keep aside.  * Boil the water.  * To this add crushed spices and sugar.  * Boil till the flavor comes out from the spices.  * Then add tea powder.  * Let it boil.  * Turn off the flame.  * Strain it.  * Pour this to the serving glass.  ENJOY!!!!

  An Excellent Drink to reverse Fatty liver        A very  simple recipe to reverse fatty liver. All the ingredients in this drink have many benefits.  INGREDIENTS :- * Coriander  - 100gm * Black cumin seeds - 25 gm * Cumin seeds - 25 gm * Cinnamon - 25 gm * Cardamom - 25 gm * Fenugreek seeds - 25 gm * Dry ginger - 25 gm * Jackfruit powder  - 1 tbs * Water - 250ml METHOD :- * Dry roast all the ingredients except jackfruit powder.  * Then grind it to a fine powder.  * Store in an air tight container.  For making jackfruit powder :- * Take 4 month old tender jackfruit. Cut into small pieces, then Sundried until it is completely dried. Then grind it to a fine powder. Store in an air tight container.         Roasted Guava Chutney        This chutney is a combination of spiciness and fruity flavor. This goes well with grilled pineapple.  INGREDIENTS :- * Guava - 250gm * Green chilli - 2 * Pepper powder - 1/2 tsp * Ginger - 1/2 inch piece * Coriander leaves - 1 handful * Lemon juice - 1 tsp * Black salt - as needed * Salt - as needed METHOD :- * Grill the guava on the flame for 5-8 minutes.  * Remove the seeds and outer part of the grilled or roasted guava.  * Cut into pieces.  * To a mixer jar add guava pieces and all the other ingredients.  * Grind it.  * Transfer this to a bowl.  * Guava chutney is ready.  ENJOY!!!!

      Excellent  Drink for Diabetes       This excellent night drink for sugar patients. You can use fenugreek water instead of normal water. It's very easy to make.  INGREDIENTS :- * Ladies finger / okra - 2 * Chia seed - 1 tbs * Apple cider vinegar - 1-2 tsp * Water - 1 cup METHOD :- * Soak the chia seeds.  * Clean and cut the ladies finger into small pieces.  * Add this ladies finger into the water.  * Let it rest for 2 hours.  * After that add soaked chia seeds and apple cider vinegar to this.  * Mix well.  * Drink is ready.  ENJOY!!!!

   Pazhampori / Banana      Fritters      Banana fritters is a Lovely treat serve hot with a cup tea or coffee. This is one of my favorite snack.  INGREDIENTS :- * Ripped banana - 2 * All purpose flour - 8 tbs * Sugar - 4 tsp * Instant yeast - 1 pinch * Salt - 1 pinch * Turmeric powder - 1/4 ts * Water - 200ml * Oil - for frying METHOD :- * To a bowl add flour, sugar, turmeric powder, yeast and salt.  * Mix well.  * Add water to this make a smooth batter. The batter should not be too thick or too loose.  * Let it rest for 1 hour.  * Cut the banana into thin pieces.  * Dip in the batter.  * Fry it in the oil. Flip both sides.  * Tasty banana fritters is ready.  ENJOY!!!! 

Jackfruit Varattiyathu / chakka Varattiyathu

    Chakka / Jackfruit Varattiyathu /  halwa       Jackfruit Varattiyathu or chakka Varattiyathu is a delicious sweet can be stored upto a year in room temperature. We can make jackfruit ada, jackfruit payasam out of this.  INGREDIENTS :- * Deseeded jackfruit - 1 kg * Jaggery - 450 gm * Ghee - 2 - 4 tbs METHOD :- * Cut the deseeded jackfruit into small pieces.  * Steam the  jackfruit in a steamer until it cooked well.  * Boil the jaggery along with 1/2 cup of water until the jaggery gets completely melts.  * Turn off the flame and strain this to remove the impurities in jaggery. Jaggery syrup is ready.              MASALA DOSA       Masala dosa is a popular South Indian breakfast. This is a stuffed crepe. To make the delicious masala dosa without any mistake follow my step by step instructions.  INGREDIENTS :- For Masala :- * Potato - 2 * Carrot - 1 small * Onion - 1 small * Green chilli - 2 * Ginger - 1 inch piece * Fennel seed - 1/2 tsp * Turmeric powder - 1/4 tsp * Oil - 1tbs * Curry leaves - 1 sprig * Coriander leaves - 2 tbs For Dosa :- * Raw rice - 3 cup * Urad dal - 1/2 cup * Fenugreek seeds - 1 tsp * Boiled rice - 3/4 cup METHOD :- For Dosa batter :- * Mix urad dal and fenugreek seeds.  * Wash the urad dal and fenugreek seeds well.  * Wash the rice and soak for 5 hours.       Refreshing Lemon Juice        Perfect recipe of Fresh refreshing  lemon juice made from freshly squeezed lemon. Good for cooling down the body and relief from  tiredness. Follow all the steps correctly.  INGREDIENTS :- * Lemon - 1/2 * Water - 1 glass * Sugar - 4 tsp * Salt - 1 pinch * Ginger juice - 1/4 tsp METHOD :- * To a bowl add water, sugar and salt.  * Mix well until the sugar gets completely melts.  * Then squeeze the lemon to this and add ginger juice.  * Transfer this lemon juice to a bottle.  * Shake well for 30 seconds.  * Pour this to the serving glass.  * Refreshing lemon juice is ready.  ENJOY!!!!

      BOLI      Boli  is a very yummy sweet . Boli and ada payasam, a harmonious treat from Kerala Cuisine.  INGREDIENTS  :- For filling :- * Chana dal - 3/4 cup * Jaggery - 2 piece * Cumin powder - 1/2 tsp * Cardamom powder - 1/2 tsp * Dry ginger powder - 1/2 tsp * Ghee - 2 tbs * Turmeric powder - 1/4 tsp * Water - 1 cup For dough :- * All purpose flour - 1 cup * Ghee - 2 tsp * Sugar - 1 tsp * Milk - 4 tbs * Water - 4 tbs * Turmeric powder - 1pinch * Salt - 1 pinch METHOD :- For filling :- * Dry roast the chana dal till light brown color.  * Soak for 15 minutes.  * Wash well.  * Cook the chana dal along with turmeric and water.  * Cook until the chana dal is completely cooked.  * Let it cooled down and grind to a fine paste.         EASY CHURROS           Churros is a fried crispy dough with soft inside coated with cinnamon powder from Spanish and Portuguese cuisine.  INGREDIENTS :- * All purpose flour - 1 cup * Butter - 2 tbs * Sugar - 1 tbs * Vanilla essence - 1/2 tsp * Water - 1 cup For cinnamon sugar :- * Caster sugar - 1/4 cup * Cinnamon  powder - 1/2 tsp * Oil - for frying METHOD :- * To a bowl add caster sugar and cinnamon powder.            BEBINCA        This is a popular dish in Goa. All the ingredients are familiar. This is a sticky layered cake.  INGREDIENTS :- * All purpose flour - 75 gm * Coconut milk - 2 cups * Egg yolk - 5 * Sugar - 1 cup * Ghee  - 2 tbs * Vanilla essence - 1/4 tsp * Nutmeg powder - 2 pinch * Salt - a pinch For caramel :- * Sugar - 2 tbs * Water - 3 tbs METHOD :- * Caramelize the sugar with 2 tbs sugar and 3 tbs water. Keep aside.  * Mix the egg yolk and vanilla essence.  * To a bowl add Flour, nutmeg powder a pinch of salt.  Mix well.  * To this gradually add  3/4 cup of coconut milk from 2 cups of coconut milk.  * Mix well without any lumps.  * Then add egg yolk - vanilla mix.  * Mix well.  * After that add sugar.     GREEN GRAM PORRIDGE    Healthy way to include green  gram in our diet.  It's very filling and loaded with nutrients. This is easy to digest.  INGREDIENTS :- * Rice - 1 cup * Green gram - 1/2 cup * Fenugreek seeds - 1 Tbs * Thick coconut milk - 1/4 cup * Ghee or butter - as needed * Salt - to taste  METHOD :- * To a pressure cooker add rice, green gram, fenugreek.  * Add water as needed to cook this.  * When it's completely cooked.  * open the lid and add salt and coconut milk.  * Mix well.  * Allow to boil.  * When it's starts bubbling. * Turn off the flame.  * Pour this to the serving bowl.  * Add ghee or butter.  * It's ready.  ENJOY!!!! 

Custard cookies

        CUSTARD COOKIES     This cookies are crispy and chewy mouth watering eggless cookies.  INGREDIENTS :- * Unsalted Butter - 50 gm *  Sugar - 3 1/2 Tbs * Cardamom - 2 * All purpose flour - 1/2 cup * Custard powder - 3 1/2 Tbs * Milk - 2 Tbs METHOD :- * To a mixer jar add sugar and Cardamom. Grind to a fine powder.  * Then we need to cream the butter. It's very important to note that butter should be at room temperature.  * Best the butter along with powdered sugar with cardamom.  Until it becomes  soft and light in color.  * To this add all purpose flour and custard powder.  Mix well.  * Then add milk (room temperature) to this. Unniyappam

          UNNIYAPPAM      Unniyappam is a sweet fritters made with rice, jaggery and banana. This is a popular sweet in Kerala.  INGREDIENTS :- * Raw rice  - 2 cups * Medium sized ripe banana - 2 * Coconut pieces - 3 Tbs * Ghee - 2 Tbs * Cardamom powder - 1 tsp * Jaggery - 350 gm * Salt - 1 pinch * Water - approximately 1 cup METHOD :- * Wash the rice.  * Soak for 6 hours.  * Then grind rice along with bananas  by gradually adding water. ( approximately 1 cup)  * The rice batter should not be too fine. When we rup the batter with our two finger we feel small rice crumps ( not big crumps).  * Boil jaggery with 1/2 cup of water until the jaggery gets completely melts.  * Pour this Luke warm jaggery syrup into the rice batter. Mix well.  * Roast the coconut pieces in 2 Tbs of ghee until it becomes light brown color.  * Add this to the batter along with cardamom powder and a pinch of salt. Mix well....

                ILA ADA   Ila ada is a Kerala delicacy made with jaggery, rice flour and coconut, wrapped  in banana leaf and steamed . So that the flavor of banana leaf is fully locked in this snack.  INGREDIENTS :- * Roasted rice flour - 1 cup * Water - 1 1/2 cup * Salt - to taste * Ghee - 1 tsp For filling : * crushed jaggery - 1 cup * Water - 1/4 cup * Grated coconut - 1 1/2 cup * Sugar - 1 TSP * Dry ginger - small piece * Cumin seeds - 1/4 tsp * cardamom powder - 1/4 tsp METHOD :- * Boil one and half cup of water and ghee.  * When it starts bubbling.  * Add rice flour and salt.  * Mix well until the water is completely reduced and becomes a soft dough.  * Turn off the flame.  * Knead to a smooth non sticky dough by greasing your hand with ghee.  For filling :- * To a mixer jar add sugar, dry ginger and cumin seeds.  * Grind it to a fine powder. EASY CARROT PUDDING

    EASY CARROT PUDDING       This carrot pudding is a mouthwatering easy to make pudding. Let's see how to make this.  INGREDIENTS :- * Carrot - 4 * Full fat milk - 1 ltr * Sugar - 1/4 cup * Condensed milk - as needed * Vanilla essence - 1/4 tsp * China grass - 16 gm * Water - 1 1/2 cup METHOD :- * Thinly slice the carrot.  * To a pan add sliced carrot and milk.  * Cook the carrot.  * when the carrot is completely cooked add sugar. * Mix well * Then add condense milk ( as per your sweetness) and vanilla essence.  * Boil this for few minutes.  * Turn off the flame.  * Let it cool for some time.  * Mix China grass with 1 1/2 cup of water.       GHEE BISCUITS     This is a melts in mouth biscuits. Very easy to make, needs only 4 ingredients. You can use wheat flour or all purpose flour to make this.  INGREDIENTS :- * All purpose flour - 1 cup  * Powdered sugar - 1/2 cup * Vanilla essence - 1/4 tsp * Ghee - 1/4 cup METHOD :- * Mix all purpose flour, powdered sugar and vanilla essence.  * Then gradually add the ghee to make a soft dough.  * Knead to a soft dough.  * Take a small portion. Shape it into a ball and flatten it slightly by pressing with hands.  * Then arrange in a baking tray lined with butter paper.  * Preheat the oven to  140°C  * Bake for 20 minutes.  * It's ready.  ENJOY!!!!

    ONION PAKODA   Onion pakoda is deep fried snack. These are crispy and flavorful snack perfect for winter season. But you can enjoy it anytime with tomato sauce, mint chutney, green chutney.. INGREDIENTS :- * Medium sized onion - 5 * Green chilli - 1 - 2 * chopped ginger - 1 Tbs * chilli powder - 1/2 Tbs * salt - to taste * gram flour - 2 Tbs * All purpose flour - 2 Tbs * Chopped Curry leaves - 2 Tbs * Oil - for frying METHOD :- * Slice the onions.  * Mix sliced onions with salt.  * Mix well.  * Keep aside for 10 minutes, so that it snooze out the water content in it.  * Then squeeze out the water content in the onion with our hands.     Karimeen pollichathu       This is special Kerala style fish fry in banana leaf. Traditionally this recipe is made with karimeen also known as pearl spot. But you can also make this with any other fish.  INGREDIENTS :- * Fish ( karimeen/ pearl spot) - 2   * Kashmiri chilli powder - 3 Tbs * Coriander powder - 1/2 tsp * Pepper powder - 1 Tbs * Turmeric powder - 1/4 tsp * Salt - to taste * Ginger - 1 inch piece * Garlic - 5 big flakes For gravy :- * Small onion - 20 * Ginger - 1 inch piece * Green chilli - 4 * Coconut milk - 1 cup * Coconut oil - for frying * Curry leaves METHOD :- * To a mixer jar add chilli powder, turmeric powder, pepper powder, coriander powder, salt, ginger and garlic.  * Add little water.
