Sukiyan / Sughiyan

   Sukhiyan is a fritter made with goodness of green gram, coconut and jaggery . It's a popular food items in South Indian Cuisine.  Pair it with a cup of tea for an amazingly delicious evening. 

  INGREDIENTS :-

* Green gram - 1 cup

* Water - 1 1/2 cup

* Grated coconut - 1 cup

* Flattened rice - 1/2 cup

* Cardamom powder - 1 tsp

* Cumin seed powder - 1/2 tsp

* Ghee - 1tsp

* Salt - 1 pinch

* Oil - for frying

For jaggery syrup :-

* Jaggery powder - 3/4 cup

* Water - 1/4 cup

For Batter :-

* All purpose flour - 1 cup

* Fine rice flour - 2 tbs

* Turmeric powder - 1 pinch 

* Salt - 1/2 tsp 

* Water - 1 1/4 cup

METHOD :-

* Dry roast the green gram. 

* After that wash it. 

* Add this to a pressure cooker along with 1 1/2 cup of water and a pinch of salt. 

* Cook for 5-6 six whistle. Or until the green gram become tender not mashy. Keep aside. 

* Boil jaggery along with water until the jaggery gets completely melt. 

* Jaggery syrup is ready. Let it cool down. 

* For the batter add flour, rice flour, turmeric powder, salt and water. Mix it. Set aside. 

* To a mixing bowl add cooked green gram, jaggery syrup, grated coconut, cardamom powder, cumin seed powder, ghee and flattened rice. 

* Mix it. 

* Make lemon sized balls out of this. 

* Heat oil in a pan. 

* Then dip the green gram balls in the batter. 

* When the oil becomes hot, add these balls and fry it until the outer layer is cooked. 

* Tasty sukiyan is ready to serve.
