Perfect idli recipe

   Idli is one of the healthiest South Indian breakfast dish. Making soft and fluffy idli at home is easy with all the mentioned tips and tricks. These soft idli goes well with sambar, chutney. You can also make dosa with the same batter. 


INGREDIENTS :-

* Idli rice - 2 cup

* Whole Urad dal - 3/4 cup

* White Flattened rice - 3/4 cup

* Fenugreek seeds - 1 tsp

* Salt - to taste

METHOD :-

* Wash the rice, urad dal and fenugreek separately. 

* Soak these ingredients separately for 3 hours. 

* After 3 hours, refrigerate for  these for another 3 hours. ( if not refrigerated, it will heat up while grinding on the mixer jar. If you are grinding on a grinder you need not refrigerate it) 

* Drain out the water from the rice and fenugreek. 

* Then drain the water from the urad dal and save the water from the urad dal for grinding. 

* Before grinding, add the flattened rice to a bowl and add 1/2 cup of water. 

* Soak this for 5 minutes. 

* Then to a mixer jar first add urad dal. 

* First grind it without adding water. 

* Then add little by little water.(drained water from the urad dal)

* Grind this till it becomes thick, soft buttery texture.

* Transfer this to a mixing bowl. 

* Then grind the rice in one or two batches by adding little by little water. ( water drained from the urad dal, need about 1 1/2 cup of water) 

* Grind it to a smooth paste, yet slightly grainy. 

* Transfer this to the same mixing bowl that we have added the urad dal paste. 

* Then grind the soaked fenugreek seeds and soaked flattened rice. 

* Grind to a smooth paste. 

* Transfer this to the same mixing bowl. Then add salt. 

* Mix well and combine with your hands. Batter should occupy half of the bowl otherwise it will overflow while fermentation. 

* Close the lid. Do not close it tightly. 

*Allow to ferment. 

* Depending on the climate it will take 8 - 9 hours. 

* After fermentation. Open the lid. Mix it gently. 

* Add water to the idli steamer. 

* Let it boil. 

* Grease oil on the idli mould. 

* Then pour the idli batter using a ladle. 

* Then place it on the top of the steamer. 

* Close it. 

* Cook for 8 - 10 minutes on medium to high flame. 

* Turn off the flame. 

* Take out the mould from the steamer. 

* Then sprinkle some water on the idli to prevent drying out the outer portion of the idli. 

* Let it sit for 2 minutes. Then de mould it. 

* Soft idli is ready to serve.
