Curd Vada / Thayir vada
Curd vada is a popular South Indian dish. Vadas soaked in the curd mix is very delicious. Curd vada can be served as snack or as a starter before a South Indian meal. It's a good snack in summer to lower the body temperature or after any spicy snack.
INGREDIENTS :-
* Urad dal - 1 cup
* Fine rice flour - 1 tbs
* Green chilli - 3
* Pepper corn - 1 tsp
* Chopped ginger - 1 tbs
* Curry leaves - 2 sprigs
* Asafoetida - 1/2 tsp
* Onion - 1 small
* Salt - to taste
* Oil - for deep frying
For curd :-
* Curd - 1 cup
* Green chilli - 1
* Chopped ginger - 1 tsp
* Curry leaves - 1 sprig
* Grated carrot - 2 tbs
* Oil - 1 tsp
* Mustard seed - 1/4 tsp
* Sugar - 1/2 tsp
* Salt - to taste
METHOD :-
* Soak urad dal for 3 hours. After 3 hours keep inside the fridge for 2 hours.
* Drain the water and grind to a smooth paste by adding little cold water. ( nearly 3 tbs water)
* Transfer this to a bowl. To this add rice flour, chopped onion, ginger, green chilli, pepper corns, asafoetida, salt and chopped curry leaves.
* Beat well using a whisk to get a soft and fluffy vada.
* To a bowl add curd, salt and sugar. Beat it nicely.
* For tempering, heat oil on a pan. When the oil becomes hot add mustard seed.
* Then add green chilli, chopped ginger and curry leaves.
* Saute it for 1 minute.
* Then add this to the curd. Mix well. Set aside.
* Heat oil. When the oil becomes hot grease your hand with water and take a small ball from the batter.
* Make a hole in the center with your finger.
* Then drop this in hot oil by investing your hands over the oil.
* Cook in medium flame by flipping both sides until light brown color.
* Dip the hot vada for 5-6 seconds.
* Then take out the vada from the water. Gently press it between your hands to squeeze out the water.
* Once it done add this to the prepared curd mix.
* Let it rest for half an hour.
* Repeat the same process for all the vadas.
* Finely garnish with grated carrot.
* Tasty curd vada is ready to serve.
