Plain Biriyani / Kuska Biriyani

  A unique way of preparing the famous biriyani recipe without any vegetables or meat. It's a popular South Indian biriyani particularly from the Hyderabadi cuisine. It goes well with vegetable kurma, Egg kurma and salan. If you like Kismiss add to this it will give a light sweetness to the biriyani. 


INGREDIENTS :-

* Biriyani rice - 2 cup

* onion - 1

* Shallots - 10

* Tomato - 2 medium

* Green chilli - 1

* Chilli powder - 1 tsp

* Coriander powder - 1/2 tsp

* Turmeric powder - 1/2 tsp

* Ginger - 1 inch piece

* Garlic - 9

* Cinnamon - 1 small piece

* Clove - 3

* Cardamom - 2

* Fennel seeds - 1 tsp

* Bay leaf - 1

* Garam masala - 1 tsp

* Oil - 2 tbs

* Ghee - 2 tbs

* Curd - 2 tbs

* Salt - to taste

* Coriander leaves - 1 handful

* Water - 3 cup

METHOD :-

* Wash the rice and soak for 20 minutes. 

* After that drain it. 

* Heat a pan, add oil. When the oil becomes hot add cinnamon, clove, bay leaf, cardamom and fennel seeds. 

* Saute it for 30 seconds. 

* Then add ginger piece, garlic and green chilli. Saute it for 1 minute. 

* To this add shallots. Saute it. 

* Turn the flame low, then add chilli powder, turmeric powder, coriander powder. 

* Add  tomato pieces. Then turn the flame to medium. 

* Cook till the raw taste is gone. 

* To this add coriander leaves and turn of the flame. 

* Let the completely cooled. Then grind it. Keep aside. 

* Heat a pressure cooker, add ghee and oil. 

* Then add chopped onion, saute it until it becomes light brown color. 

* After that add tomato pieces and salt. Saute it  till the tomato cooked. 

* To this add the grinded masala paste. 

* Saute it for 1-2 minutes. 

* Add curd. Mix well. 

*Add 3 cup hot water along with garam masala. 

* Then add the rice. 

* When it starts vigorously boil. Let it boil for 3 minutes. 

 * Then close the lid without  whistle. 

* Turn the flame low. Let it cook for 12 minutes in low flame. 

* Turn off the flame. 

* When the pressure is completely gone open the lid and add coriander leaves. Mix well. 

* Tasty Plain biriyani is ready to serve.
