Sweet idiyappam / Idiyappam with jaggery syrup
Sweet idiyappam is a flavorful sweet dish made by blending idiyappam with jaggery syrup and flavoured with cardamom. This dish is ideal to make for weekend breakfast. Here I am preparing idiyappam and jaggery syrup separately and at the serving time pour the jaggery syrup as much we need.
INGREDIENTS :-
* Fine roasted rice flour - 1 cup
* Water - 1 1/2 cup
* Salt - to taste
* Sugar - 1 tsp
* Ghee - 1 tsp
* Grated coconut - 1/4 cup
For jaggery syrup :-
* Jaggery - 1/4 cup
* Water - 3/4 cup
* Cardamom - 2
* Ghee - 1/2 tsp
METHOD :-
* Boil water along with salt and sugar.
* When it starts boiling add flour little by little. Mix well till it gets gathers together.
* Turn off the flame.
* Add gher then mix with a ladle, once it's hand bearable hot. Knead with your hands until it becomes a smooth dough.
* Take the idiyappam press and grease with oil.
* Take a small portion from the dough and fill it in the idiyappam press.
* Grease the steamer plate, spread some grated coconut then press the dough through idiyappam presser to the steamer plate.
* Repeat this in batches until the dough finished.
* To the steamer pour some water and boil it.
* Then place the idiyappam steamer plate above it and steam it for 5 minutes.
* After 5 minutes demould it. Keep aside.
* Boil 3/4 cup water along with jaggery.
* When the jaggery gets completely.
* Turn off the flame. Then strain it.
* After that add ghee and cardamom. Mix well.
* To the serving plate add idiyappam then pour the jaggery syrup as you need.
* It's ready.
