     Kalathappam is a traditional sweet snack from Malabar. This recipe is simple and tastes delicious. Rice, jaggery and cardamom is the main ingredients of kalathappam with onions and coconut pieces fried in ghee as the toppings,  creating an exotic flavor. 

 INGREDIENTS :-

* Raw rice - 1 cup 

* Steamed rice - 1 1/2 tbs

* Cardamom - 3

* Cumin seeds - 1/2 tsp

* Shallots - 6

* Coconut pieces - 1/4 cup

* Sugar - 2 tbs

* Salt - 1 pinch

* Ghee - 2 tbs

* Baking soda - 1/4 tsp

For jaggery syrup :-

* Jaggery powder - 1 cup

* Water - 1/4 cup

METHOD :-

* Soak the rice in hot water (not boiling water little hotter than luke warm water)  for 1 hour. 

* Boil jaggery and water till the jaggery gets completely melts. 

* Then strain it. Keep aside. 

* After 1 hour drain the soaked rice. 

* Transfer this to a mixer jar along with steamed rice, cardamom, cumin seeds and salt.

* Grind this to a fine paste by adding 1/2 cup of water. 

* Add this to a bowl. To this add prepared jaggery syrup, sugar and baking soda. Mix well. 

* Heat a pan add ghee when it becomes hot add sliced shallot and coconut pieces. 

* Fry till it becomes golden brown color. 

* Once it done pour the prepared batter to this. 

* Turn the low. 

* Close the lid. Lid with a small hole will be better. Otherwise cook in a pressure cooker without the whistle. 

* Cook in low flame for 15 - 20 minutes. 

* After that turn off the flame. 

* Let it cool down on the same pan. 

* Then transfer this to the serving plate.
