Potato bonda / Masala Bonda
Potato Bonda is a yummy filling snack. Spiced mashed potato balls dipped in gram flour batter and deep fried to perfection. Potato Bonda is not that difficult to make. It's a vegan friendly dish. Goes well with mint chutney, coconut chutney, tomato sauce.
INGREDIENTS :-
* Potato - 2
* Onion - 1
* Grated carrot - 1 tbs
* Green chilli - 2
* Chopped Ginger - 1 tsp
* Fennel seeds - 1/2 tsp
* Turmeric powder - 1/4 tsp
* Salt - to taste
* Coriander leaves - 1 tbs
* Curry leaves - 1 sprig
* Oil - for frying
For making batter :-
* Gram flour - 3 tbs
* Fine rice flour - 3/4 tbs
* Chilli powder - 1/2 tsp
* Asafoetida - 1 pinch
* Salt - to taste
METHOD :-
* Cook the potato and mash it. Keep aside.
* Heat a pan add oil, then add fennel seeds.
* After that add ginger and green chilli, saute it for a few seconds.
* To this add chopped onion. Saute it it becomes transparent.
* Add curry leaves, turmeric powder and salt along with 1/4 cup hot water.
* When it starts bubbling, turn the flame low and let it boil till the water is completely reduced.
* Add Mashed potato and grated carrot. Mix well for 1 minute.
* After that add coriander leaves and then turn off the flame. Keep aside.
* To a bowl add gram flour, Rice flour and all other ingredients for the batter.
*Make a ribbon consistency batter by adding enough water.
* Make small balls out of the potato mix.
*Dip it in the gram flour mix batter.
* Deep fry it till light brown color.
* It's ready to serve.
