Neyyappam

     Neyyappam, a traditional tea time snack from Kerala. The snack made with rice and jaggery with  crispy outside and soft inside. 

 INGREDIENTS :-

* Raw rice - 1 cup

* Jaggery - 150 gm

* Ghee - 2 tsp

* Water - 1/4 cup

* Small ripen banana     (palayankodan) - 1

* Sesame seeds - 1 tsp

* Salt - 1 pinch

* Cardamom powder - 1/2 tsp

* Oil - for frying

METHOD :-

* Wash and soak the rice for 4 hours.

* After that strain it. 

* Heat a pan add jaggery and 1/4 cup of water.

* Boil till the jaggery melts. 

* Then strain it to remove the impurities. 

* To a blender add strained rice, banana piece pieces, salt and jaggery syrup. 

* Grind in two or three batches to a coarse paste. 

* The ground paste should be like 3/4th ground. Shouldn't be ground to a fine paste. 

* Add this to a bowl, then add sesame seeds, cardamom powder and ghee. Mix well. 

* Keep the batter for 8 hours. 

* Heat oil, when it becomes medium hot pour one ladle of  batter.

* Fry till golden brown color. 

* Tasty Neyyappam is ready to serve.
