INGREDIENTS :-

* Grated carrot - 2 cups

* All purpose flour - 2 cups

* Granulated sugar - 1cup

* Baking powder - 2 tsp

* Baking soda - 1/2 tsp

* Raisins - 1/4 cup

* Vanilla essence - 1 tsp

* Clove - 4

* Salt - 1 pinch

* Egg - 4

* Oil - 3/4 cup

For Caramel syrup :-

* Sugar - 1 cup

* Water - 1 cup

METHOD :-

* Caramelize the sugar then add 1 cup of water. 

* Let it boil. 

* To this add grated carrot and raisins. 

* Boil until 3/4th of  the water is reduced. 

* Turn off the flame.Allow to cool completely. Set aside. 

* To a bowl add flour, Baking soda, baking powder and salt. 

* Sieve this 3 time. Set aside. 

* To a mixer jar add remaining 1 cup of sugar. Grind them into fine powder. 

* Beat the eggs along with vanilla until it becomes fluffy. 

* To this add powdered sugar, again beat it until it becomes mix well. 

* After that add oil. Beat this for 3 minutes. 

* Take the caramelized carrot mix add this beaten egg mix into this. 

*Mix well using a whisk. 

* After that add the flour mix. 

* Mix in circular motion using a whisk or spatula. 

* Take a 10 inch cake tin. Grease with oil then place a parchment paper. 

* Pour the cake mix to this. 

* Tap it. 

* Bake in 180°C for 45 minutes and then 160°C for 15 minutes. 

* After that take out from the oven. Let it cool down completely. 

* Easy and tasty carrot cake is ready to serve.
