Masala Vada / Paruppu vada
Masala vada is a popular South Indian tea time snack. I prefer peas dal instead of Chana dal, because it tastes better. Hot Masala vada goes well with chutney and a perfect accompaniment for tea or coffee.
INGREDIENTS :-
* Peas dal / vada paruppu :- 1 cup
* Onion - 1
* Garlic - 4 - 5 cloves
* Ginger - 1 inch piece
* Cinnamon - small piece
* Green chilli - 7
* Fennel seeds - 1 tsp
* Coriander leaves - 2 tbs
* Curry leaves - 2 sprig
* Salt - to taste
* Oil - for deep frying
METHOD :-
* Soak the peas dal or paruppu for 4 hours.
* After 4 hours drain it.
* To a mixer jar add garlic, ginger, green chilli, cinnamon, fennel seeds, curry leaves.
* Grind it to a nice coarse paste without adding wate. Keep aside.
* Take 2 tbs of soaked dal / paruppu and keep aside.
* Then coarsely grind the remaining soaked dal without adding water in pulse mode.
* Transfer this to a bowl then add 2 tbs soaked dal that we have already kept aside and coarsely grinded masala to this.
* To this add chopped onion. Mix it well.
* Then take a small portion from the batter.
* Just roll it with your hand. And gently flatten it with your palm. (not too thick)
* Heat oil. When the oil becomes hot gently drop the vadas.
* Fry it till light golden brown color.
* Follow the same process for all vadas.
* Tasty masala vada is ready to serve. Serve hot with a cup of tea.
