Soya cutlet / High protein snack
Soya cutlet is a delicious and nutritious snack made primarily from soya granules or chunks, which are rich in protein and serve as a great meat substitute for vegetarians and vegans. These cutlets are typically prepared by mixing soaked and drained soya with mashed potatoes, chopped vegetables like onions, carrots, and green chilies, along with spices and herbs to enhance the flavor. The mixture is then shaped into patties, coated with breadcrumbs, and shallow- or deep-fried until golden brown and crispy. Soya cutlets are popular as a tea-time snack, party appetizer, or even a quick evening bite, often served with green chutney or ketchup. They're not only tasty but also packed with nutrients, making them a healthy and satisfying option for people of all ages.
METHOD :-
* Soya Chunks - 1 cup
* Potato - 1
* Carrot - 1 small
* Onion - 1 small
* Green chilli - 1
* Ginger garlic paste - 1 tsp
* Chilli powder - 1/2 tsp
* Turmeric powder - 1/2 tsp
* Meat masala powder - 1 1/2 tsp
* Tomato ketchup - 2 tbs
* Salt - to taste
* Bread crumbs - 3/4 cup
* Refined flour - 2 -3 tbs
* Water - 5 tbs
* Oregano seasoning - 1 tsp
* Coriander leaves - 3 tbs
* Oil - for deep frying
For marination :-
* Chilli powder - 1/2 tsp
* Turmeric powder - 1/4 tsp
* Garam masala powder - 1/2 tsp
* Ginger garlic paste - 1 tsp
* Vinegar - 1/2 tsp
* Salt - to taste
METHOD :-
* Boil 3 cups of water along with salt.
* When it starts bubbling add the soya chunks.
* Close it and turn off the flame.
* Let it sit for 5 minutes.
* After 5 minutes strain out the water and squeeze out the water from the soya chunks.
* Then cut the squeezed chunks into two pieces.
* Marinate it with chilli powder, turmeric powder, garam masala powder, ginger garlic paste and salt.
* Mix it well and let it sit for 30 minutes.
* Then shallow fry it for 5-6 minutes in medium flame. Let it cool down completely. Transfer the fried soya chunks to a blender and Just crush it and Set aside.
* Boil the potato until it cooked well.
* Then peel and mash it. Set aside.
* Grate the potato and set aside.
* Heat a pan add 1 tbs of oil. Then add chopped onion. Saute it till it turns transparent.
* Then add ginger garlic paste and chopped green chilli. Saute it till the raw taste is gone.
* Turn the flame to low. Then add chilli powder, turmeric powder, meat masala powder and salt.
* Mix it. After that add tomato ketchup.
* Saute it for few seconds. Then add crushed soya chunks, mashed potato and grated carrot.
* Mix it well in medium flame for 2-3 minutes.
* Turn off the flame.
* Finally add chopped coriander leaves. Mix it.
* Let it cool down.
* After that make balls out of this. Then gently press it to make a round half inch thickness patties.
* Then mix refined flour with water to make thin batter.
* Add little and oregano seasoning to the flour batter. Mix it.
* Dip the patties in the batter. Then coat it with bread crumbs.
* Do the same process for all the patties.
* Heat oil for deep frying.
* When the oil becomes hot,gently drop the coated patties.
* Fry it in medium flame until golden brown color.
* Tasty soya cutlet is ready.
