Carrot Cabbage stir fry / Thoran
Carrot cabbage stir fry with grated coconut is a simple yet flavorful South Indian-style side dish that combines the natural sweetness of carrots and the mild crunch of cabbage. The vegetables are finely shredded and sautéed with mustard seeds, curry leaves, green chilies, and a hint of turmeric in oil, creating a fragrant base. Toward the end of cooking, freshly grated coconut is stirred in, adding a subtly nutty flavor that balances the dish beautifully. Often served with rice and sambar or rasam, this stir fry is light, nutritious, and packed with fiber, making it a wholesome addition to any meal.
INGREDIENTS :-
* Cabbage - 250gm
* Carrot - 1 medium sized
* Green chilli - 3
* Grated coconut - 1/4 cup
* Mustard seeds - 1/2 tsp
* Dried red chilli - 2
* Shallots - 5
* Curry leaves - 1 sprig
* Oil - 2 tsp
* Salt - to taste
METHOD :-
* Wash and peel the carrot and cabbage.
* Grate the carrot and cabbage.
* Heat a pan add the grated carrot and cabbage along with enough water for cooking, salt and slitted green chilli.
* Cook this until it's done. Set aside.
* For tempering, heat oil.
* Then add mustard seeds. Wait to pops up.
* After that add sliced shallots. Saute until it turns golden brown color.
* Once it done add dried red chilli and curry leaves. Saute it for few seconds.
* Then add grated coconut. Saute it for 1 minute.
* After one minute add the cooked carrot cabbage mix to the tempering.
* Mix it well.
* Turn off the flame.
* Tasty and easy carrot cabbage stir fry or thoran is ready.
