Rava Laddu / Sooji Ladoo
Rava laddu, also known as sooji laddu, is a traditional Indian sweet made primarily from semolina (rava), sugar, and ghee. Often prepared during festivals and special occasions, this sweet treat is loved for its rich, aromatic flavor and melt-in-the-mouth texture. The semolina is gently roasted in ghee until fragrant, then mixed with sugar, cardamom powder, and grated coconut or milk to enhance flavor and help bind the mixture. Garnished with roasted cashews and raisins, rava laddu is shaped into small, round balls while still warm. Simple yet delicious, it holds a special place in Indian households as a symbol of warmth, festivity, and homemade goodness.
METHOD :-
* Rava / Sooji - 1 cup
* Sugar - 1/2 cup
* Water - 2 tbs
* Grated coconut - 1/2 cup
* Ghee - 1 tbs
* Cashew nuts and raisin - as needed
*Hot Milk - 2 tbs
* Cardamom powder - 1/2 tsp
METHOD:-
* Heat a pan add ghee.
* To this add cashew nuts and raisin.
* Roast it till the cashew turns golden brown.
* Remove from the flame and set aside.
* To the same pan with ghee add rava.
* Roast in medium flame until aromatic. Do not over roast otherwise the color will change. Set aside.
* Boil sugar along with water.
* When it starts melting, add the grated coconut.
* Mix it and cook in medium to low flame for 3 minutes.
* After that add roasted rava, cardamom powder and roasted cashew nuts and raisin.
* Mix it and turn off the flame.
* At this stage add hot milk. This will helps to bind the laddu.
* Mix it well.
* When the mixture is warm enough that is bearable to hands. Shape into laddu while the mixture is still warm.
* Tasty rava laddu is ready.
