Easy cooker Vegetable Pulao / Pulav/ one pot meal

     Easy cooker veg pulao with carrot and green peas is a quick and delicious one-pot meal perfect for busy days. Made by sautéing aromatic spices like cinnamon, bay leaf, and cloves in ghee, this pulao combines basmati rice with chopped carrots and green peas for a colorful and nutritious dish. Everything is cooked together in a pressure cooker, making the process simple and fuss-free. The mild flavors of the vegetables blend beautifully with the fragrant rice, making it a comforting dish that pairs well with raita, pickle, or a simple salad.

INGREDIENTS :-

* Basmati rice - 1 cup

* Water - 1 3/4 cup

* Chopped carrot - 1/4 cup

* French beans - 2

* Green peas - 1/4 cup

* Onion - 1

* Green chilli - 2

* Ginger garlic paste - 1 1/2 tsp

* Cinnamon - 1

* Cloves - 2

* Cardamom - 2

* Bay leaf - 1

* Ghee - 3 tbs

* Chilli powder - 1/2 tsp

* Turmeric powder - 1/4 tsp

* Cashew and raisin - as needed

* Coriander leaves - 3 tbs

* Mint leaves - 2 tbs

* Salt - to taste

METHOD :-

 * Wash and soak the rice for 20 minutes. 

* After 20 minutes, drain out the water and set aside. 

* Heat a pressure cooker. 

* Add ghee. Then add cashew nuts and raisins. 

* Saute it until the cashew nuts turns light brown color. 

* Then remove from the flame and set aside. 

* To the same pressure cooker and ghee add cinnamon, cloves, cardamom and bay leaf. 

* After that add chopped onion. 

* Saute it till it turns light brown color. 

* Once it done add chopped green chilli and ginger garlic paste. 

* Saute it till the raw taste of ginger garlic paste is gone. 

* Turn the flame very low and add chilli powder and turmeric powder. Mix it. 

* Then add chopped veggies. Saute it for 1-2 minutes in medium flame. 

* Once it done add drained basmati rice along with coriander leaves and mint leaves. Mix it. 

* Then add 1 3/4 cup hot water  to this along with salt. 

Let it boil vigorously for 3 minutes in high flame. 

* After 3 minutes close the lid without the whistle and turn the flame to very low and cook it for another 12 minutes. 

* After 12 minutes Turn off the flame. 

* Let it sit for 5 minutes. 

* After 5 minutes open the lid.

* Finally add fried cashew nuts and raisins. Mix it. 

* Tasty and easy cooker vegetable Pulao is ready.
