Corn Capsicum masala
Corn Capsicum Masala is a flavorful and colorful Indian dish that combines the sweetness of corn with the crunch and vibrant taste of bell peppers (capsicum) in a rich, spiced gravy. Typically prepared with a tomato-onion base, the masala is enhanced with aromatic spices like cumin, coriander, turmeric, and garam masala, creating a well-balanced and mildly spicy flavor profile. INGREDIENTS :-
* Sweet corn kernels - 1 cup
* Capsicum/ Bell pepper - 1
* Onion - 2
* Tomato - 1
* Green chilli - 1
* Ginger - 1 inch piece
* Garlic - 5-6 cloves
* Cinnamon - 1 inch
* Cardamom - 1
* Cloves -2
* Bay leaf - 1
* Chilli powder - 2 tsp
* Coriander powder - 2 tsp
* Garam masala powder - 1/2 tsp
* Ghee - 1 tbs
* Oil - 1/2 tbs
* Cumin seed - 1/2 tsp
* Curd - 1/4 cup
* Thick coconut milk - 1/4 cup
* Kasuri Methi powder - a pinch
* Garam masala powder - 1 pinch
* Coriander leaves - 2 tbs
* Salt - to taste
METHOD :-
* Heat a khadai over medium to high flame.
* Add ghee and oil. Allow it to heat up.
* Then add all the whole spices and let them crackle for a few seconds.
* After that add chopped onion. Saute until it turns golden brown color.
* Once it done add chopped ginger, chopped garlic and chopped green chilli.
* Saute until the raw taste is gone.
* Then turn the flame to low and add chilli powder, coriander powder and turmeric powder. Mix it.
* Add 1/4 cup hot water.
* Add chopped tomato to this. Cook until the gher gets separated.
* Then add whisked curd and salt. Cook this for 2 minutes.
* After 2 minutes, add hot water to adjust the consistency of the gravy. It should be semi thick and not too thin.
* Then add the sweet corn. Mix it.
* Cover and Cook this for 5 minutes in low flame.
* After 5 minutes open the lid and add diced capsicum.
* Cook this for another 2-3 minutes.
* Finally add garam masala powder, kasuri methi powder and coriander leaves. Mix it.
* Turn of the flame.
* Tasty corn capsicum masala is ready.
