Bitter gourd gravy curry
Bitter gourd gravy curry, prepared in a style reminiscent of traditional fish curry, is a bold and flavorful dish that balances the vegetable's natural bitterness with a rich, tangy, and spicy gravy. Sliced bitter gourd is first sautéed or shallow-fried to reduce its sharpness, then simmered in a tamarind and coconut based sauce infused with ground spices, garlic, ginger, and onions—much like a South Indian fish curry. The use of curry leaves and fenugreek seeds enhances the aroma, while the tamarind gives it a sour depth that mimics the tang typically associated with seafood curries. This vegetarian version carries the same intense flavors and gravy-soaked satisfaction, making it a hearty companion to steamed rice.
INGREDIENTS :-
* Bitter gourd - 1
* Chopped onion - 1/4 cup
* Shallots - 7
* Tomato - 1
* Green chilli - 2
* Ginger garlic paste - 1 tsp
* Chilli powder - 1 1/2 tsp
* Coriander powder - 2 tsp
* Turmeric powder - 1/4 tsp
* Fenugreek seeds - 1/4 tsp
* Grated coconut - 1/2 cup
* Tamarind - 1 gooseberry sized
* Fennel seeds - 1/4 tsp
* Jaggery powder - 1/2 tsp
* Oil - 1 1/2 tbs
* Curry leaves - 1 spring
* Salt - to taste
METHOD :-
* To a small bowl add chilli powder, turmeric powder and coriander powder. Add 2 tbs of water and mix. Set aside.
* Cut the cleaned bitter gourd into small pieces.
* Add this to a bowl along with 1 tbs salt.
* Let it sit for 20 minutes.
* After 20 minutes squeeze out the water from the bitter gourd.
* Heat a khadai, add oil when it becomes hot add the squeezed bitter gourd.
* Shallow fry it in medium to high flame until slightly change the color.
* Remove the fried bitter gourd from the flame.
* To the same khadai with oil add fenugreek seeds. Wait to pops up.
* To this add chopped onion. Saute it till it becomes light brown color.
* Then add ginger garlic paste and slitted green chilli.
* Saute it until the raw taste is gone.
* Once it done add the chilli powder mixture. (That we have already mixed with water)
* Mix it well. Then add chopped tomato. Saute it until the oil separates.
* Once it done add the fried bitter gourd pieces and shallots pieces.
* Mix it for 1-2 minutes.
* After that add curry leaves and tamarind water nearly 1 1/2 cups of water and salt.
* Allow to boil until the raw taste of tamarind is completely reduced.
* Meanwhile add the grated coconut and fennel seeds to a mixer jar.
* Grind it to a fine paste by adding enough water.
* After the raw taste of tamarind is gone, add the coconut paste to the curry along with jaggery powder. Adjust the consistency according to you. Mix it.
* When it starts bubbling. Turn off the flame.
* Tasty bitter gourd gravy curry us ready.
