Sharkara upperi / Sharkkara varatti
Sharkkara varatti Or upperi is a traditional sweet snack from Kerala. It a type of Jaggery-coated banana chips that is especially popular during the festival of Onam and is commonly included in Onam sadhya. Sharkkara varatti is one of the must-have banana chips served at the beginning of the Onam feast along with salty banana chips. The spices used like dry ginger powder and cumin seed powder not only enhance the flavor but also aid in digestion, which is especially helpful in heavy meals like Sadhya.
INGREDIENTS :-
* Raw nendran banana / plantain - 4
* Jaggery - 3/4 cup
* Sugar - 1 tbs
* Rice flour - 2 tbs
* Cumin seed powder - 1/2 tsp
* Dry ginger powder - 1 tsp
* Cardamom powder - 1/4 tsp
* Pepper powder - 1/4 tsp
* Coconut oil - for deep frying
METHOD :-
* Peel and cut the plantain into lengthwise four pieces.
* Dip this in the water along with salt and 1/4 tsp turmeric powder for 2 minutes.
* Then drain out the water.
* Then cut this into small thick pieces.
* To a bowl add little salt and 1/2 litre of water. Again dip this banana pieces in the salt water for 2 minutes.
* After that wash it and drain out the water.
* Heat a khadai add oil for deep frying.
* When the oil become hot add the drained banana pieces.
* Fry it in medium flame until crispy.
* When the bubbles is settled down sprinkle some water.
* Turn the flame high. Then the bubbles settled down. Remove the banana chips from the flame. (By doing like this will make the chips more crispier)
* Let the chips cool down completely.
* For coating, boil jaggery along with 1/4 cup water. When it melts completely.
* Remove from the flame. Then strain it to remove the impurities.
* Again boil this jaggery syrup until it reached one string consistency.
* When it reaches the one string consistency. Boil it again for one minute.
* Then drop the fried banana chips into this jaggery syrup.
* Stir it continuously until the syrup thickens and coats the chips well.
* Turn off the flame.
* Finally add dry ginger powder, cumin seed powder, pepper powder cardamom powder, sugar powder. Mix well.
* Then add the rice flour as needed, just to harden the coating.
* Once it cooled down, transfer to an air tight container. It stays good for weeks.
* Tasty sharkkara varatti is ready
