Corn soup

Corn soup is a warm, comforting dish made primarily from sweet corn, often combined with ingredients like onions, garlic, broth, and cream or milk for added richness. It can be enjoyed as a smooth purée or with whole corn kernels for texture. Beyond its delicious, slightly sweet flavor, corn soup offers several health benefits. Corn is a good source of fiber, which aids in digestion and helps maintain a healthy gut. It's also rich in essential nutrients like vitamin C, folate, and B vitamins, supporting immune function and energy production. Additionally, the antioxidants in corn, such as lutein and zeaxanthin, are beneficial for eye health. Whether served as a starter or a light meal, corn soup is both nourishing and satisfying.

INGREDIENTS :-

* Corn kernels - 1 cup

*  Vegetable stock water - 3/4 cup

* Carrot - 1 small

* Capsicum - half sized

* Spring onion - 2 tbs

* French Beans - 4

* Butter - 1  tbs

* Vinegar - 1/4 tsp

* Pepper powder - 1/4 tsp

* Soya sauce - 1/2 tsp

* Sugar - 1 pinch

* Corn flour (optional) - 1 tbs

* Salt - to taste

METHOD :-

* Boil the corn kernels with enough water for boiling. 

* Boil until it starts floating. Then strain it. 

* After that divide the boiled corns into two equal halves. 

* Transfer one portion of corn into a mixer jar and grind it to a fine paste by adding enough water. 

* Heat a khadai. Add butter. 

* To this add the chopped carrot, chopped French beans, chopped capsicum. 

* Saute it for one minute in medium to high flame. Remove from the flame and set aside. 

* To the same khadai, add grinded corn paste along with vegetable stock water. 

* When it starts bubbling, turn the flame medium to high and let it simmer for 5 minutes and discard the scum that floats on the surface to get clear soup. 

* After 5 minutes add the other portion of boiled corns along with sauteed veggies, salt, sugar, vinegar, pepper powder and soya sauce.

* Let it boil for another 4-5 minutes. 

* Meanwhile make corn flour slurry by adding corn flour with 2-3 tbs of water. 

* Add this corn flour slurry to the soup. 

* Stir it continuously to avoid lumps. Boil for another 1 minute. 

* Finally Sprinkle chopped sring onion. 

* Turn off the flame. 

* Tasty and easy corn soup is ready.
