Easy Homemade rice ada for payasam
Homemade rice ada is a traditional ingredient used in Kerala-style payasam, made by transforming rice flour into delicate, flat flakes. To prepare it at home, rice flour is first mixed with hot water to form a smooth, pliable dough. This dough is then spread out thinly. which are steamed until cooked and slightly translucent, then cut into small squares, Once cooled and dried ,the ada is ready to be used in payasam. If you want to store it for one or two days (change the water after 10 hours), transfer the ada to a bowl and pour enough water to completely submerge the ada. Then store in refrigerator for two days. If you want to keep it for longer,sun dried it and store it in an airtight jar. Homemade rice ada is very tasty, it soaks up the rich flavors of coconut milk or cow's milk, jaggery, and cardamom. Homemade rice ada brings a soft, chewy texture and an authentic taste to the dessert that’s hard to replicate with store-bought versions, making it a cherished element in festive and traditional Kerala sweet preparations.
INGREDIENTS :-
* Raw rice (pachari) - 1 cup
* Sugar - 1/2 tsp
* Salt - small pinch
* Ghee - 1 tsp
* Water - as needed
METHOD :-
* Wash and soak the rice till immersing level for 4 hours.
* Drain out the water.
* Then grind it to a smooth paste by adding enough water.
* Transfer this to a bowl. Then add sugar, ghee and salt.
* Mix well and correct the consistency by adding enough water. The batter should be in a thin flowing consistency.
* Then grease a steel plate with some ghee and pour 3-4 tbs of batter (quantity of the batter depends on the size of the plate).
* Tilt the plate so the the batter spread evenly and form a thin layer.
* Then steam it until the batter turns translucent.
* Remove from the heat.
* Then cut into small squares.
* It's ready to make payasam.
* If you want to store it for one more day. Then add water until the ada submerged fully and store it in the fridge. (Change the water after 10 hours)
* If you want to keep it for longer,sun dried it and store it in an airtight jar.
