Kara vadai / Spicy fritters

  Kara vadai is a popular South Indian savory snack, known for its crispy texture and bold, spicy flavors. Made primarily from soaked and ground lentils like peas dal and urad dal, the mixture is seasoned with green chilies, curry leaves, ginger, and sometimes fennel seeds or pepper for added aroma and heat. The batter is shaped into small balls and deep-fried until golden brown, resulting in a crunchy exterior and a soft, flavorful interior. Kara vadai is often served as an evening snack with coconut chutney or tomato ketchup, and it also makes a tasty addition to festive or special meals. Its name literally means “spicy fritter” in Tamil, and it’s cherished for its satisfying taste and comforting, homemade feel.

INGREDIENTS :-

* Idli rice - 1 cup

* Urad dal - 2 tbs

* Peas parippu - 2 tbs

* Dried red chilli - 3

* Green chilli - 2

* Chopped ginger - 1 tbs

* Asafoetida powder - 1/2 tsp

* Baking soda - 2 pinch

* Curry leaves - 2 spring

* Salt - to taste

* Oil - for frying

METHOD :-

* Wash the idli rice and soak for 2 hours. 

* Wash the peas parippu and soak for 2 hours along with dried red chilli. 

* Wash the urad dal and soak for 2 hours. ( Separately soak all these) 

* After 2 hours, grind the idli rice to fine paste by adding little water. Set aside. 

* Grind the urad dal to a fine paste by 1-2 tbs of water. Do not add too much of water. Set aside.

* Reserve 1tbs of soaked peas parippu (for texture). Coarsely grind the remaining peas parippu without adding water. 

Prepare the vada mix:

* Transfer all the ground mixture to a mixing bowl.

* To this add reserved soaked whole peas parippu, chopped ginger, chopped green chilli, chopped curry leaves, asafoetida powder, baking soda and salt. 

* Mix every thing well. The batter should be in a thick dropping consistency. 

* Heat oil in a khadai for deep frying on medium heat. 

*Grease your hands or wet slightly with water. 

* Take a small ball of the mixture, once thr oil is hot drop the vada carefully. 

* Fry a few at a time, turning occasionally until golden brown and crisp. 

* Remove and drain on paper towels. 

* Tasty kara vadai is ready. Serve hot with coconut chutney or tomato chutney.
