Vazhakkai bajji / Raw banana (plantain) bajji
Vazhakkai bajji, also known as raw banana or plantain bajji, is a popular South Indian snack made by deep-frying thin slices of raw banana dipped in a seasoned chickpea flour (besan) batter. The batter is typically spiced with ingredients like red chili powder, turmeric, asafoetida (hing), and sometimes ajwain or cumin seeds, giving the bajji a flavorful and mildly spicy taste. The raw banana slices, once coated and fried to a golden crisp, develop a crunchy exterior while maintaining a slightly firm texture inside. Often enjoyed with coconut chutney or tomato sauce, vazhakkai bajji is a common street food and a favorite during tea time, especially during rainy or festive days.
INGREDIENTS :-
* Raw banana (plantain) - 2
* Chickpea flour - 1 cup
* Fine rice flour - 2 tbs
* Maida - 1 tbs
* Chilli powder - 1 tsp
* Asafoetida powder - 1/4 tsp
* Baking soda - 1 pinch
* Salt - to taste
* Water - 1/4 cup + 2 tbs
* Oil - for deep frying
METHOD :-
* To a bowl add chickpea flour, rice flour, maida, chilli powder, asafoetida powder, baking soda, salt and 1tsp oil.
* Mix it well.
* Gradually pour the water to make medium thick batter. Batter should be in a coating consistency. Not too thick, not too thin. Set aside. (Needs nearly 1/4 cup and 2tbs of water)
* Slightly Peel the raw banana and slice them into medium thick slices. Keep it immersed in water until use. Otherwise it will change the color.
* Heat oil in a pan.
* Take the banana slices out from the water, drain the water as much as you can.
* Then dip and coat the banana slices in the batter.
* Drop carefully into hot oil.
* Fry until golden brown color in medium flame.
* Tasty vazhakkai bajji Or raw banana bajji is ready. Serve hot with any type of chutney or with tomato sauce.
