Tapioca curry / Kappa curry

Tapioca curry, a flavorful dish popular in parts of South India—especially Kerala—is made by cooking tapioca (cassava) with a blend of spices, often paired with coconut, mustard seeds, turmeric, and curry leaves. The soft, starchy tapioca absorbs the rich flavors of the spice-infused coconut gravy, resulting in a hearty and comforting dish. Tapioca curry is not just a meal but a cultural staple, deeply rooted in the agrarian traditions and culinary heritage of the region. It is often enjoyed as a breakfast or lunch dish and serves as a symbol of rustic, wholesome cooking.

INGREDIENTS :-

* Tapioca - 300 gm

* Chilli powder - 1 tsp

* Turmeric powder - 1/2 tsp

* Coriander powder - 1 tsp

* Pepper powder - 1/2 tsp

* Grated coconut - 4 tbs

* Cumin seeds - 1/2 tsp

* Shallots - 5

* Salt - to taste

For tempering :-

* Garlic - 3 cloves

* Mustard seeds - 1/2 tsp

* Fenugreek seeds - 1 pinch

* Dried red chilli - 2

* Curry leaves - 2 sprigs

* Oil - 1 tbs

METHOD :-

* Peel off the skin of tapioca and cut into small cubes. 

* Boil the tapioca with enough water for 2 -3 minutes. 

* Strain it and Set aside. 

 * To a mixer jar add shallots, coriander powder and pepper powder. 

* Coarsely grind without adding water. 

* To a khadai add strained tapioca pieces, grinded shallots mixture, salt, turmeric powder and chilli powder. 

* Add nearly 1 1/2 cups of water to this. 

* Cook until the tapioca pieces cooked well or it becomes tender. 

* Meanwhile to a mixer jar add grated coconut, cumin seeds. 

*Grind it to a fine paste by adding enough water. 

* Add this grinded paste to the tapioca mixture. 

* Boil this for 2-3 minutes. 

* Turn off the flame. 

* For tempering, heat oil. When it becomes hot add mustard seeds. Wait to pops up. 

* Then add fenugreek seeds. Saute it for 2-3 seconds. 

* Once it done add crushed garlic. 

* Saute it until it turns ligh brown color. 

 * Then add dried red chilli and curry leaves. 

* Saute it for 5 seconds. 

* Turn off the flame. 

* Add this tempering to the tapioca curry. Mix it. 

* Tasty tapioca curry is ready. It's a semi thick curry. Goes well with dosa, roti and steamed rice.
