Manchurian Fried rice

Manchurian fried rice is a flavorful Indo-Chinese dish that combines the bold, spicy flavors of Manchurian sauce with the savory comfort of stir-fried rice. Typically made with cooked basmati or long-grain rice, it includes sautéed vegetables like bell peppers, carrots, and cabbage, along with soy sauce, garlic, and chili for a tangy kick. The rice is often paired with or topped by crispy Manchurian balls—deep-fried vegetable or meat dumplings coated in a spicy, slightly sweet sauce—adding texture and depth to the dish. Popular in Indian street food culture and restaurants alike, Manchurian fried rice offers a fusion experience that’s rich, zesty, and deeply satisfying.

INGREDIENTS :-

For Manchurian :-

* Cabbage - 250 gm

* Chopped carrot - 1

* Beans - 5

* Capsicum - 1/4 cup

* Ginger garlic paste - 1 tbs

* Green chilli - 2

* Pepper powder - 1/2 tsp

* Soya sauce - 1 tsp

* Chilli sauce - 1 tsp

* Butter - 1 tbs

* Spring onion - 2

* Coriander leaves - 2 tbs

* Sugar - 1/2 tsp

* Salt - to taste

* Refined flour - 2 tbs

* Corn flour - 4 tbs

* Oil - for frying

For Manchurian fried rice :-

* Basmati rice - 1 cup

* Chopped Ginger and garlic - 1 tbs

 * Green chilli - 1 small

* Chopped cabbage - 1/4 cup

* Chopped carrot - 2 tbs

* Beans - 1

* Chopped capsicum - 2 tbs

* Spring onion - 1

* Light soya sauce - 1 tsp

* Dark soya sauce - 2 tsp

* Sugar - 1/2 tsp

* Vinegar - 1/2 tsp

* Pepper powder - 1/4 tsp

* Spring onion white - 2 tbs

* Coriander leaves - 2 tbs

* Corn flour - 1 tbs

* Water - 2 tbs

* Oil - 2 tbs

* Salt - to taste

METHOD :-

* For cooking rice. Wash and soak the rice for 20 minutes. 

* After that drained out the water completely. 

* Transfer this soaked and drained rice to a pressure cooker add 1 1/2 cups of water, salt and little oil. 

* Cook this until vigorously boil in high flame. 

* Once it done close the lid without whistle. 

* Cook this in high flame for 3 minutes. Then turn the flame very low and allow to cook this for 12 minutes. 

* After that turn off the flame. 

* Let it cool down completely. 

* Then open the lid. 

* Transfer this to a bowl. Refrigerate it for minimum 2 hours. 

For making Manchurian balls :-

* To a bowl add chopped cabbage, chopped carrot, chopped beans, chopped capsicum, chopped spring onion, chopped coriander leaves, crushed green chilli, ginger garlic paste, soya sauce, chilli sauce, butter, pepper powder, sugar and salt.

* Mix and combine well. 

* Add refined flour and corn flour. 

* If you feel the mixture has too much of moisture you can add little more flour. 

* Heat oil for frying. 

* Meanwhile make small balls out of the vegetable mixture. 

* When the oil becomes hot add the balls. 

* Fry until golden brown color in medium flame. Do not fry them on high heat or low heat. Set aside. 

For making fried rice :-

* Heat a khadai Or wok. 

* Add oil, when it becomes hot add chopped ginger, garlic and chopped green chilli. 

* Saute it until the raw taste is gone. 

* Then add the chopped veggies. Saute it for 2-3 minutes in medium to high flame. 

* Once it done add light soya sauce and dark soya sauce on the sides of the wok. Mix it. 

* Then add pepper powder, sugar, vinegar and salt

* Mix it. 

* Then add chopped spring onion white and chopped coriander leaves. 

* Make corn flour slurry by mixing 1 tbs corn flour and 2 tbs water. 

* Add this corn flour slurry to this. 

* Stir it continuously for 1 minute. 

* Then add Manchurian balls.

* Mix it. 

* Then add cooked rice along with chopped spring onion green. 

* Stir it and saute it for 2-3 minutes. 

* Turn off the flame. 

* Tasty Manchurian fried rice is ready.
