Hot and Sour Chicken soup
Hot and sour chicken soup is a flavorful and comforting dish that combines the heat of chili with the tanginess of vinegar, creating a balanced and invigorating taste. Typically made with shredded chicken, the soup is thickened with cornstarch and seasoned with ingredients like soy sauce, pepper powder, and butter. METHOD :-
For chicken stock :-
* Boneless chicken - 150 gm
* Onion - 1 medium
* Carrot - half of one
* Ginger - 1 inch
* Garlic - 2 cloves
* Pepper powder - 1/2 tsp
* Water - 5 cups
* Salt - to taste
For soup :-
* Butter - 1 tbs
* Chopped garlic - 1 tbs
* Spring onion - 2 tbs
* Chopped carrot - 1/4 cup
* Chopped capsicum - 1/2 cup
* Light soya sauce - 1 tbs
* Chilli sauce - 1 tbs
* Vinegar - 1 tsp
* Sugar - 1/2 tsp
* Corn flour - 1 tbs
* Water - 2 tbs
* Pepper powder - 1/2 tsp
* Salt - to taste
METHOD :-
* For chicken stock, boil water along with chicken pieces, onion pieces, carrot pieces, chopped ginger, chopped garlic, pepper powder and salt.
* Close the lid and let it boil for 20 minutes in medium flame.
* After that turn off the flame.
* Remove the chicken pieces from the stock water.
* Then strain it. Set aside.
* Cut the chicken pieces into small pieces and set aside.
* Heat a khadai, add butter. Then add chopped garlic. Saute it for few seconds.
* Then add chopped carrot, chopped capsicum, chopped spread onion.
* Saute it for 1 minute in high flame.
* Once it done add already prepared chicken stock water.
* Then add soya sauce, chilli sauce and vinegar.
* Mix it.
* After that add pepper powder, sugar and salt.
* When it starts bubbling add boiled chicken pieces.
* Let it vigorously boil for 2 minutes in medium flame.
* Meanwhile make corn flour slurry by mixing corn flour with 2 tbs of water.
* Gently add this corn flour slurry to the soup. Stir it continuously to avoid lumps.
* Boil this for another one minute.
* After 1 minute turn off the flame.
* Transfer this to a serving bowl.
* Tasty hot and sour chicken soup is ready.
