Khaja sweet recipe

       Khaja is a traditional Indian sweet known for its crisp, flaky texture and syrupy sweetness. Originating from the eastern states of Bihar and Odisha, Khaja is made by layering thin sheets of dough, typically prepared from refined flour (maida), and then deep-frying them until golden brown. After frying, the sweet is soaked in sugar syrup, which gives it a glossy finish and rich taste. The outer layers remain crunchy while the inner parts become slightly soft and syrup-infused, creating a delightful contrast. Khaja is especially popular during festivals, religious offerings, and weddings, and is also famously offered at the Jagannath Temple in Puri as part of the Mahaprasad.

INGREDIENTS :-

For dough:-

* Refined flour - 1 cup

* Sugar - 1 tsp

* Salt - 1/4 tsp

* Water - 1/4 cup

* Turmeric powder/ Food color- 1/4 tsp

For sugar syrup :-

* Sugar - 1/2 cup

* Water - 1/4 cup

* Cardamom powder - 1/4 tsp

For dusting :-

* Corn flour - 3 tbs

* Refined flour - 3 tbs

* Oil - for deep frying

METHOD :-

* To a bowl add the refined flour, sugar, salt and turmeric powder or yellow food color. 

* Mix it. 

* After that gradually add water to make a soft, thick and Non-sticky dough. 

* Divide the dough into 3 equal sized balls. 

* Then dust some flour on the counter top and starts to roll all the dough balls. 

* Roll as thin as possible, making sure to dust the flour as required.

* Then place one dough sheet on the counter top. 

* Spread some oil and dust some flour on it. Then place the second dough sheet on the top of this. Then spread some oil and dust some flour. Then place the third dough sheet. Then dust some flour over that. Don't spread oil on the top. 

* Then start to roll from one side. 

* Once it done, cut them into 1 inch pieces. 

* Then gently flatten it. 

* Heat oil for deep frying. Drop it and fry until crispy in medium flame. 

* For sugar syrup, heat a pan and add sugar, water and cardamom powder. 

* Boil until the syrup turns one string consistency. 

* Once it done wait for 20 seconds. 

* After 20 seconds drop the fried khaja into the syrup. 

* Give a quick mix. 

* Turn off the flame. 

* Tasty and crispy khaja sweet is ready. Store upto 10 days in an air tight container.
