Pumpkin Stir Fry: A Simple, Nutritious Delight

Pumpkin stir fry is a flavorful and wholesome dish that showcases the natural sweetness and creamy texture of pumpkin. Serving suggestions:-

* Goes well with steamed rice and flatbread. 

INGREDIENTS :-

* Raw Pumpkin - 250 gm

* Chilli powder - 1 1/2 tsp

* Turmeric powder - 1/4 tsp

* Grated coconut - 2 tbs

* Oil - 1 tbs

* Mustard seed - 1/2 tsp

* Shallots - 3

* Curry leaves - 1 sprig

* Dried red chilli - 1

* Salt - to taste

METHOD :-

* Wash and cut the pumpkin into pieces. (Do not peel it, otherwise it become mushy) 

* To a khadai add 1/4 cup of water, pumpkin pieces, turmeric powder, chilli powder and salt. 

* Cook until the pumpkin becomes tender. Set aside. 

* For tempering, heat a pan add oil. 

* When it becomes hot add mustard seeds. Wait to pops up. 

* Add sliced shallots. Saute till it turns transparent. 

* Once it done, add grated coconut and dried red chilli. 

* Saute it for 2 minutes. Then add curry leaves. 

* To this add cooked pumpkin. 

* Mix it well. 

* Turn off the flame. 

* Tasty pumpkin stir fry is ready.
