Kai Murukku recipe
Kai Murukku, also known as "handmade murukku," is a traditional South Indian savory snack made primarily from rice flour and urad dal (black gram) flour. It is named "kai" (meaning "hand" in Tamil) because it is skillfully shaped by hand into intricate spirals or coils before being deep-fried to a golden crisp. This snack is especially popular during festivals like Diwali and Krishna Jayanthi, and is cherished for its crunchy texture and mildly spiced flavor. Making kai murukku is considered an art, often passed down through generations, and requires both patience and practice to master the delicate shaping technique. It is not only a delicious treat but also a symbol of tradition and cultural heritage in many Tamil households.
INGREDIENTS :-
* Raw rice - 2 cup
* Urad dal - 1/2 cup
* Butter - 1 1/2 tbs
* Black sesame seeds - 1 tbs
* Cumin seeds - 1 tsp
* Salt - to taste
* Oil - fot deep frying
METHOD :-
* Soak raw rice for 3 hours, then rinse and drain out the water.
* Grind it to a smooth paste using very little water. Set aside.
* Dry roast urad dal till light brown color.
* Let it cool down completely.
* Transfer the dry roasted urad dal to fine powder.
* Add this powdered urad dal to the grinded rice paste along with butter, sesame seeds, cumin seeds and salt.
* Mix and combine well. The batter shouldn't be very tight or too loose. It should be smooth and flexible.
* After that grease your hands with little oil. Take a small lemon sized ball from the batter, bring one end to slightly pointing.
* Then gently twist it using your finger and turn motion, roll out the dough into round shape on a cotton clothe.
* Do the same procedure until the batter finished.
* After that heat oil for deep frying.
* When the oil becomes hot add prepared murukku one by one. Fry it in medium to high flame until the bubbles stop.
* Tasty and crispy kai murukku is ready.
