Creamy Paal Kappa/ Milk Cassava
Paal Kappa/ Milk Cassava is a traditional dish from the South Indian state of Kerala, especially popular among the Christian communities in the central and southern regions. The name translates to "milk tapioca," where "paal" means milk and "kappa" means tapioca. It is made by cooking tapioca pieces in coconut milk along with mild spices like green chilies, garlic, and curry leaves, resulting in a rich, creamy, and subtly flavored dish. Unlike the spicier versions of kappa dishes, Paal Kappa is known for its mellow and comforting taste, often paired with spicy fish curry or beef fry to balance the flavors. It showcases the classic Kerala combination of coconut and root vegetables, highlighting the region’s love for simple yet hearty meals.
INGREDIENTS :-
* Cleaned Tapioca - 500 gm
* Shallots - 4
* Garlic clove - 1
* Green chilli - 1
* Medium thick Coconut milk - 300ml
* Salt - to taste
For tempering :-
* Oil - 1 tbs
* Shallots - 4
* Dried red chilli - 2
* Curry leaves - 1 sprig
METHOD :-
* Cut the peeled tapioca into cubes.
* Boil 3/4 litre of water.
* Drop the tapioca pieces into this along with salt.
* Allow to cook until the tapioca pieces becomes tender.
* Turn off the flame and strain it. Set aside.
* Crush the shallots, garlic and green chilli.
* To a khadai add the strained tapioca pieces, crushed shallots, garlic and green chilli.
* Mix it.
* Then add coconut milk and enough salt.
* Cook this in medium flame.
* When it starts bubbling, stir it continuously for 4-5 minutes in medium to high flame.
* Then turn off the flame.
* For tempering, heat a pan add oil. When it becomes hot add mustard seeds. Wait to pops up.
* Then add dried red chilli pieces.
* Saute it for 3-4 seconds.
* After that add sliced shallots and curry leaves.
* Saute it until shallots turns golden brown color.
* Once it done, turn off the flame and add this tempering to the cooked tapioca mixture.
* Mix it.
* Tasty Paal Kappa or milk cassava is ready.
