Gopi Paratha / Cauliflower paratha
Gopi Paratha is a soft, whole wheat flatbread popular in Indian cuisine, known for its light, fluffy texture and subtle nutty flavor. Made from finely milled wheat flour, water, and a touch of oil or ghee, Gopi paratha are typically cooked on a hot griddle until golden brown and slightly puffed. They pair beautifully with a wide variety of dishes, from rich curries like paneer butter masala and chicken tikka to simple accompaniments like lentil dal or sautéed vegetables. For a lighter meal, they can be served with yogurt, pickles, or a drizzle of honey. Gopi Chapatis are also excellent for wraps, making them a versatile option for both traditional and fusion meals. Serve warm with a pat of butter or ghee on top for an extra touch of indulgence.
INGREDIENTS :-
* Cauliflower - 1 small
* Onion - 1 small
* Chopped ginger - 1 tsp
* Chopped garlic - 1 tsp
* Green chilli - 1 small
* Chopped coriander leaves - 1 tbs
* Cumin seed powder - 1/2 tsp
* Garam masala powder - 1/2 tsp
* Chilli powder - 1 tsp
* Salt - to taste
* Oil - 2 tsp
For paratha :-
* Wheat flour - 1 1/2 cups
* Sugar - 1/2 tsp
* Salt - to taste
* Ghee - as needed
METHOD :-
* To a bowl add wheat flour, salt and sugar. Mix it.
* Gradually add water and start kneading.
* Knead it to a soft Non-sticky dough.
* Grease with oil and let it rest for 30 minutes.
* For filling, Cut the cauliflower into small florets.
* To a pot add 3/4 litre of water.
* Boil this along with little salt.
* Then gently drop the cauliflower florets into this.
* Blanch it for 3-4 minutes.
* Then turn off the flame and strain it.
* Let it cool down completely.
* Transfer the cooled cauliflower florets to a chopper.
* Chop it nicely.
* To a bowl add nicely chopped cauliflower, chopped onion, chopped ginger, chopped garlic, chopped green chilli, chopped coriander leaves, chilli powder, cumin seed powder, garam masala powder and salt.
* Mix it.
* Heat a pan add oil. When it becomes hot add the cauliflower mixture.
* Cook it for 5 minutes in medium flame.
* Turn off the flame and let it cool down completely.
For making cauliflower/ gopi paratha:-
* Pinch two small balls from the dough.
* Dust some flour and flatten them using a rolling pin, roll them into 4 to 5 inches round disc. Try making both discs the same size.
* On one disc place the cauliflower filling in the center, keeping about little empty space from the sides.
* Place the other disc on the top of this.
* Seal the edges with your fingers.
* Then dust some flour and start rolling.
* Roll the paratha into a round shape, about 7 to 8 inches in diameter or about the size of normal chapati.
* Heat a tawa, place the rolled cauliflower paratha.
* Cook both side for 30 seconds. Then sprinkle some ghee on both sides and cook it until it's completely cooked in medium flame.
* Follow the same procedure for all.
* Tasty gopi paratha is ready to serve.
