Crispy Bitter gourd fry / Karela fry
Bitter gourd fry is a flavorful and nutritious Indian side dish made by slicing bitter gourd (also known as karela) into thin rounds and frying them with spices. Despite its naturally bitter taste, the dish becomes deliciously crisp and tangy when cooked with ingredients like turmeric, chili powder, amchur powder to balance the bitterness. It's often served as an accompaniment to rice and dal or roti and is cherished for its health benefits, including its ability to help regulate blood sugar levels. Proper preparation—such as salting and rinsing the slices before cooking—can help reduce the bitterness, making it more palatable while still retaining its unique flavor and nutritional value.
INGREDIENTS :-
* Bitter gourd - 1 medium sized
* Chilli powder - 1/2 tsp
* Turmeric powder - 1/4 tsp
* Garam masala powder - 1/2 tsp
* Amchur powder - 1 tsp
* Chickpea flour - 1 1/2 tbs
* Corn flour - 1 tbs
* Salt - to taste
* Oil - for deep frying
METHOD :-
* Cut the bitter gourd into 1/4inch round pieces.
* For salting, Put 1 tbs of salt in it.
* Let it rest for 30 - 45 minutes.
* After that some water snooze out from the bitter gourd.
* Rinse it off. This will help to reduce the bitterness.
* To the rinsed bitter gourd pieces add chilli powder, turmeric powder, amchur powder, garam masala powder, salt, chickpea flour, corn flour.
* Mix and combine well.
* Meanwhile heat oil for deep frying.
* When the oil becomes hot.
* Turn the high. Then add bitter gourd pieces. After few seconds turn the flame to medium.
* Fry until crispy in medium flame.
* Tasty and crispy Bitter gourd fry is ready.
