Unnakaya / Stuffed banana

Unnakaya recipe  is a malabar sweet made with Ripe Banana. Bananas are steamed, mashed and stuffed with coconut filling and fried it. The main thing keep in mind is take nendrapazham (in Malayalam) and Don't take overripe bananas. 

INGREDIENTS :-

* Ripe Banana ( nendrapazham) - 2

* Grated coconut - 1/2 cup

* Ghee - 2 tbs

* Cashew nuts - 7

* Raisins - 10

* Cardamom powder - 1/2 tsp

* Sugar - 2 tbs

* Oil - For frying

METHOD :-

* Heat a pan add ghee. 

* To this add cashew nuts and raisins. Fry it till the cashew nuts are light brown color. Remove from the flame. Set aside. 

* To the same pan add grated coconut. Roast it for 2 minutes in low flame. Don't allow to turn brown color. 

* Turn off the flame, then add sugar, cardamom powder and already fried cashew and raisins. Mix it. Filling is ready. Set aside. 

* Cut the banana into half (with peel) and steam it for 10 minutes. 

* Let it cool down completely. 

* Peel it. 

* Remove the seeds. 

* Then mash it with a masher. 

* If it contains any water content, then add 1 or 2 tbp of rice flour otherwise don't add rice flour. 

* Make balls out of this. 

* Then slightly flatten with your hands. 

* Place the filling in the center. 

*Then bring the edges together and seal them, then shape it. 

* Follow the same process for all. 

* Heat the oil for frying. 

* Then fry the prepared unnakaya till it becomes brown color in medium flame. 

* Tasty unnakaya is ready to serve.
