Aloo paratha / Breakfast recipe

  Aloo paratha is a North Indian dish made with wheat flour paratha filled with potato stuffing. This is a popular Indian breakfast,Usually enjoyed with butter, yogurt or pickle. 

INGREDIENTS :-

* Wheat flour :- 1 cup

* Luke warm Water - 1/2 cup

* Salt -  to taste

* Sugar - 1 tsp

* Ghee - 3-4 tbs

For filling :-

* Potato - 2 medium

* Onion - 1

* Green chilli - 2

* Chopped Ginger - 1 tsp

* Fennel seeds - 1/2 tsp

* Turmeric powder - 1/4 tsp

* Salt - to taste

* Coriander leaves - 1 tbs

* Curry leaves - 1 sprig

* Oil - 2 tsp


METHOD :-

Making Dough :-

* To a bowl add wheat flour, salt and sugar. 

* Mix it.

* Gradually add water to this and knead to a soft non sticky dough. 

* Grease some oil and cover it

*  Let it rest 30 minutes. 

Making Filling :-

* Cook the potato and mash it. Keep aside. 

* Heat a pan add oil, then add fennel seeds. 

* After that add ginger and green chilli, saute it for a few seconds. 

* To this add chopped onion. Saute it  it becomes transparent. 

* Add curry leaves, turmeric powder and salt along with 1/4 cup hot water. 

* When it starts bubbling, turn the flame low and let it boil till the water is completely reduced. 

* Add Mashed potato. Mix well for 1 minute. 

* After that add coriander leaves and then turn off the flame. Keep aside. 

Making aloo paratha :-

* Pinch two small balls from the dough. 

* Dust some flour and flatten them using a rolling pin, roll them into 4 to 5 inches round disc. Try making both discs the same size. 

* On one disc place the potato filling in the center, keeping about little empty space from the sides.

* Place the other disc on the top of this. 

* Seal the edges with your fingers. 

* Then dust some flour and start rolling. 

* Roll the paratha into a round shape, about 7 to 8 inches in diameter or about the size of normal chapati. 

* Heat a tawa, place the rolled aloo paratha. 

* Cook both side for 30 seconds. Then sprinkle some ghee on both sides and cook it until it's completely cooked in medium flame. 

* Follow the same procedure for all. 

* Tasty aloo paratha is ready to serve.
