Cowpea Beans stir fry / Payar Mezhukkupuratti
A simple home style, refreshing and healthy recipe today. It's one of the easy to make recipe. This is one of the best accompaniment with rice and sambar. The main thing keep in mind while making this is do not add too much of water while cooking this. When you all want is something really simple yet yummy, this will be a perfect choice.
INGREDIENTS :-
* Cowpea beans - 250 gm
* Green chilli - 3-4
* Shallots - 10
* Garlic - 3 clove
* Mustard seed - 1/2 tsp
* Dried chilli - 2
* Curry leaves - 1 sprig
* Oil - 1 1/2 tbs
* Salt - to taste
* Water - 1/4 cup
METHOD :-
* Clean and cut the cowpea beans. Cut it with your hands don't use knife, cut into 1 inch length piece.(tastes will be better when cut the cowpea beans using hands)
* Heat a pan add cowpea beans, green chilli, salt and water.
* When it starts vigorously boil, turn the flame low then close the lid. Stir it occasionally.
* Cook it until it's cooked well. Set aside.
* To an another pan heat oil.
* When it becomes hot add mustard seeds, when it pops up add crushed garlic.
* Saute it for 30 seconds.
*, Then add chopped shallots and dried chilli.
* Saute it till it becomes light brown color.
* To this add curry leaves. Mix it.
* At this stage add cooked cowpea beans.
* Mix it and again cook for 4-5 minutes in low flame.
* Tasty cowpea beans is ready to serve.
