Bun Dosa / Soft Spongy Dosa

  Bun dosa is a soft and spongy thick dosa. The texture resembles the bread bun that's why the name bun dosa. This is entirely different from the traditional dosa. This is made without urad dal. Goes well with tomato chutney or coconut chutney. 

INGREDIENTS :-

* Raw rice - 1 cup

* Fenugreek seed - 1/2 tsp

* Grated coconut - 1/2 cup

* Flattened rice/ poha -1 /2 cup

* Water - 1 cup

* Salt - to taste

* Eno/ fruit salt - 1/4 tsp

METHOD :-

* Wash and soak the rice and fenugreek seed together for 4 - 6 hours. 

* After that drain off the water. 

* Transfer this to a mixer jar along with washed poha Or flattened rice and grated coconut. Blend to a smooth paste by gradually adding 1 cup of water.

* Transfer this to a large bowl. Mix with your hand, it helps in fermentation. 

* Cover and allow to ferment in warm place for 8 hours. 

* After 8 hours the batter is well fermented. 

* Add salt and eno to this, give a good mix. 

* Now heat a appam pan, grease with oil. 

* Pour a ladle full of batter over the pan. Make sure not to spread the batter. 

* Cover and simmer for 3 minutes. 

* Once the base of the dosa turns golden brown, flip it. Spread some oil or ghee on both sides. 

* Cook both sides uniformly. 

* Tasty bun dosa is ready to serve, serf with tomato chutney or with coconut chutney.
