Lemon Sevai / Lemon idiyappam/ Breakfast recipe

Lemon Sevai is a tasty, tangy dish made by tossing idiyappam with with a simple tempering. Lemon Sevai is a good choice for breakfast, dinner. Serve with coconut chutney or pickle. 


INGREDIENTS :-

* Fine roasted rice flour - 1 cup

* Water - 1 1/2 cup

* Salt - to taste

* Sugar - 1 tsp

* Ghee - 1 tsp

* Ginger - 1 tbs

* Green chilli - 2

* Dried red chilli - 2

* Roasted chana - 1 1/2 tbs

* Turmeric powder - 1/2 tsp

* Lemon juice - 1 lemon

* Curry leaves - 2 sprig

* Oil - 1  tbs

METHOD :-

* Boil water along with salt and sugar. 

* When it starts boiling add flour little by little. Mix well till it gets gathers together. 

* Turn off the flame. 

* Add ghee then mix with a ladle, once it's hand bearable hot. Knead with your hands until it becomes a smooth dough. 

* Take the idiyappam press and grease with oil. 

* Take a small portion from the dough and fill it in the idiyappam press. 

* Grease the steamer plate, then press the dough through idiyappam presser to the steamer plate. 

* Repeat this in batches until the dough finished. 

* To the steamer pour some water and boil it. 

* Then place the idiyappam steamer plate above it and steam it for 5 minutes. 

* After 5 minutes de mould it. Keep aside. 

* Let it cool down completely. 

* Then refrigerate for 1 hour. 

* Take out from the fridge, then just crush the idiyappam with your hands to medium pieces. Set aside. 

* Heat a pan add hot, when it becomes hot add chopped ginger, chopped green chilli, dried red chilli, roasted chana. 

* Saute it 1 minute. 

* To this add turmeric powder and curry leaves. Saute it for 20 seconds. 

* Once it done add the crushed idiyappam. Mix well. 

* Turn off the flame. 

* Add lemon juice. Mix well. 

* Let it rest for minimum half an hour. 

* Serve with coconut chutney or pickle.
