Palappam
Perfect Palappam
Palappam also known as appam is a tasty, lacy and fluffy pancakes or hoppers from Kerala Cuisine. This is thin and crispy around edges with soft fluffy on the center portion. Tastes delicious with vegetable stew or with vegetable kurma for a hearty vegetarian breakfast.
INGREDIENTS :-
* Raw rice - 1 cup
* Grated coconut - 1/2 cup
* Steamed rice - 1/4 cup
* Coconut water - 1/2 cup
* Instant yeast - 1/4 tsp
* Baking soda - 1/4 tsp
* Sugar - 1 tbs
* Salt - as needed
* Water - as needed
METHOD :-
* Wash and soak the rice for 5-6 hours.
* After that drain out the water.
* Transfer this to a mixer jar along with grated coconut, steamed rice, sugar, yeast and coconut water.
*Grind it by adding enough water. (Grinded paste should be not be fine paste just before that, when we rub the batter with two fingers we feel small grains)
* Add this to a big bowl. Correct the consistency, it should be little thinner than dosa batter.
* Let it ferment for 8 hours.
* Just before making appam, add salt and baking soda. Mix well.
* Then heat an appam pan or a seasoned khadai / woke with handles.
* Pour one ladle of batter to the appam pan, immediately turn and tilt the pan in circular motion so that the batter will spread in round shape.
* Further cover and turn the flame medium to low until the edges turns golden brown and gets cooked completely.
* After that take out from the pan.
* Palappam is ready to serve.
