Parotta puffs

 Parotta puffs is a snack made with regular parotta dough, which is rolled and filled with masala before baking. The main attraction  of this dish is on every bite gives the tastes of parotta with flavourful tasty filling. You can  also use meat filling, vegetable filling  to make this. 

   

INGREDIENTS :-

For parotta :-

* All purpose flour - 3cups

* Sugar - 1 tbs

* Ghee - 4 tbs

* Refined oil - 4tbs

* Salt - to taste

* Baking soda - 1 pinch

* Water - 1 cup + 1 tbs

For masala :-

* Egg - 3

* Onion - 1

* ginger-garlic paste - 1 1/2 tsp

* Chilli - 1 tsp

* Coriander powder - 1/2 tsp

* Turmeric powder - 1/4 tsp

* Garam masala - 1/2 tsp

* Salt - to taste

* Coriander leaves - 2 tbs

* Oil - 1 tbs

METHOD :-

For making masala :-

* Boil the until it's cooked well. 

* Peel the shell. 

* Then grate it using a grater. Keep aside. 

* Heat a pan, add oil. 

* Then add chopped onion. Saute it till it becomes light brown color. 

* Once it done add ginger garlic paste. Saute it till the raw taste is gone. 

* Turn the flame low, then add chilli powder, corporate powder, turmeric powder, garam masala powder. Stir it for 20 seconds. 

* After that add half cup hot water. 

* Allow to boil. When it becomes a thick gravy like consistency. Add grated egg. 

* Mix well. 

* Finely add chopped coriander leaves. 

* Turn off the flame. 

* Egg masala filling is ready. Keep aside. 

For making puffs :-

Mix the ghee and oil. Set aside. 

* To a bowl add flour, sugar, baking soda and salt. Combine it. 

* Add water (room temperature) gradually. Mix it. Parotta dough needs little more water than chapati dough. 

* Transfer this to  clean kitchen counter top. 

* Dust  1 tbs of flour on the kitchen counter top, then start to knead the dough to avoid the Stickiness. 

* First knead it rolling motion for 1 minute. Then knead the dough using both hands in stretchy motion for 15 minutes. By doing this we get soft parotta. 

* After kneading, place it in a bowl. 

* Grease with ghee and oil mix to 

Prevent the dough from drying.  Then cover it with a wet cloth. 

* Allow to rest for 2 hours. 

* Make balls out of the dough. Balls should be big lemon sized. 

* Again grease the balls with ghee-oil mix. Cover it with a wet cloth. 

* Allow to rest for 20 minutes. 

* After that spread some ghee mix on the clean kitchen counter top. 

*Take one dough ball. Pour some ghee mix on that, then gently spread it. 

* Then start to flattened it using a roller unti it becomes very thin sheet. 

* Add ghee mix generously while rolling to get  soft parotta. Make a square shaped sheet. 

* Then fold inside all the for corners to the middle. 

* Then place 1 or 2 tbs of egg filling. 

* Then fold the 4 corners to cover the filling. 

*Follow the same process for all. 

* Heat a pan, spread some oil. 

* Then Place the parotta puffs. 

* Cook all the sides by spreading oil in medium to low flame. 

*Tasty parotta Puffs is ready to serve.
